Sometimes we just make things like home cooking overcomplicated. There's the story people will tell themselves that there's no time or it would take so much prep I could never do it... That's simply not true. This soup took me no time at all and served my family three breakfasts this week.
I started by slow cooking my chicken in a crock pot. So it just sat on the counter all day. To prepare that, I basically put the chicken in the crock pot and covered it with water. I added about a half a cup of vinegar.
About ten hours into the slow cook I pulled the chicken and put it in the refrigerator to add to the soup later. I continued to cook the broth overnight.
Then I take that beautiful broth and add vegetables. I'll simmer that for about an hour. And then I put it into one gallon mason jars, usually I can fill two or three of them. Sometimes we add the chicken right away and sometimes we just add it to hot soup as an addition.
