Vegetarian dinner! 🥘. Eggplant Mykonos from the cookbook, “Moosewood Restaurant Cooks At Home.” A one-pot meal served with couscous. One of my favorites ❤️.

It’s been a while! Just put together an easy, healthy, and quick dinner and thought I would share the recipe with you: Arugula & Strawberry Salad with Grilled Chicken. Hannaford has many of the ingredients on sale this week. Arugula, chopped walnuts, sliced strawberries, chopped avocado, cucumber slices, chopped (bite size) grilled chicken tenders. Dressing: Brianna’s Sugar Free Poppy Seed Dressing.

I hope this post finds everyone well and making healthy choices during the declared Coronavirus (COVID-19) pandemic. In addition to the best practice of washing your hands often to prevent viral transmission, it’s also important to maintain and bolster your immune system. Two additional practices are widely recommended by healthcare professionals and health scientists, clinically proven to bolster your immune system. They are discussed below.

The winter has been mild with many sunny days. Attached is a scholarly article about the importance of spending time outdoors. Children and adults can benefit from spending time outside during the winter months and it helps your immune system.

The second scholarly article discusses the immune system bolstering power of fruits and vegetables, proven through numerous clinical trials. https://academic.oup.com/ajcn/article/108/1/136/5042153

During the next few weeks it may be tempting to binge out and hunker down inside our homes, but it is important to treat your body as the precious, amazing machine it is. Stay well, my friends!

Spring forward! How are you adjusting to the time change? The time change means a lot more sun and a lot more fun in the afternoon. Don’t spend it indoors. Get outside and go for a walk or run. Find a running buddy or two and hold each other accountable. Nothing burns winter fat like a run! 🏃‍♀️ 🏃🏻
