So, due to being snowed in I haven't done my meal-prepping yet, and I was in a punch for dinner tonight. On my way home I drove by 3 McDonald's, 2 Wendy's, an Arby's, and a Chick Fil A...and let me tell you....I wanted to stop soooo bad. But, I knew I had some canned and frozen food back home, so I held out and whipped up a simple dinner. It was honestly so worth it...I feel so much more nourished (and less gross) AND this whole plate was probably around $1. There's nothing wrong with occasional fast food ad a treat, but having go-to ingredients for fast and nutritious at-home meals is a must!

My philosophy on "cheat days" is that we should ALLOW ourselves TWO per week...any two days of the week. When we have one strict cheat day, we tend to feel like we HAVE to cram in as much junk food as possible on that one day to get it all out of our system. Having two days out of the week where you allow yourself to enjoy a treat keeps things much more relaxed, and honestly since changing to this method I tend to eat far less junk food even with the two days combined. Maybe I'll really need a sweet pick-me-up on a Wednesday afternoon, so I'll grab some ice cream. Instead of feeling like I just "wasted" a cheat day or meal, I just enjoy it and move on ☺️
Eating healthy isn't a regimen, it's a lifestyle...and it needs to be sustainable ❤️🌱

I made what I can best describe as a deconstructed Shawarma quinoa bowl for dinner...and let me tell you. 🤯
PRO TIP: to prevent soggy salads, salt quartered cherry tomatoes and let them sit in a mesh strainer over an empty bowl. SAVE THAT JUICE!! I used it in my dressing, along with some red wine vinegar, a little lemon juice, olive oil, salt, and pepper. That's it. And it was honestly some of the best salad dressing I've ever had. Salty tomato juice for the win!!
The chicken isn't the best looking thing I've ever made, but I marinated it in some yogurt, garlic, and lemon juice and roasted it along with MORE garlic
Then I topped everything off with some delicious homemade tzatziki sauce (minced cucumber and garlic, yogurt, lemon, salt, pepper, dill)
