As a fellow cornstarch addict I must admit this is not it! I crave the taste and feel of it whenever I'm pregnant. So I put it in my mouth dissolve it and spit it out. I know gross! Yes I take iron suppplements! Not consistently as I should.
But anywho, Cornstarch is unhealthy if eaten in large amounts or raw, but small servings are generally safe. Cornstarch is a refined carbohydrate, which means it's been processed and has little nutritional value. It also has a high glycemic index, which measures how quickly a food raises blood sugar levels. Eating a lot of cornstarch can cause blood sugar to spike rapidly and then drop sharply, which can be especially problematic for people with diabetes or prediabetes.
Regularly eating foods high in refined carbs, like cornstarch, may increase the risk of coronary heart disease, hypertension, and other heart problems. Eating too much cornstarch can lead to weight gain. Refined corn, like cornstarch, can cause blood sugar to spike, which can lead to increased insulin and inflammation.
Your craving for cornstarch could be a sign that your body's trying to tell you something. While some people blame a sweet tooth for their urge to eat carbs and sugar, others suggest that nutritional deficiencies of magnesium, zinc, chromium, amino acids (tryptophan), or vitamins (vitamin D especially), may actually be the culprit.
