Its cold again here in Wisconsin 😱 and time for soup - hearty, warm, nourishing, and so easy to put together. Here's the recipe and try it! Teenagers approved as well!
Ingredients:
Onion 1 medium
Garlic 4 to 6 cloves
Jalapeño pepper per taste
Olive oil for sauté
corn kernels 1 cup
Can of black beans
Tomatoes 1 small
Salsa or Pico de gallo - I used medium salsa - about a cup of it.
Cilantro
Taco or fajita seasoning 2 tbsp.
Avocados
Tortilla chips
Bone broth or buillion
Chicken
Salt
Turmeric (because, why not and I am Indian origin 🙃)
Chilli powder or paprika
Cumin seeds
Lime juice
1 green bell pepper
Sour cream optional.
Prep: clean and cut chicken into thin 1 to 2 inch long strips. Marinate with salt and lime juice. Set aside.
Cook: heat oil in a heavy bottom steel pan. Saute cumin seeds, chopped onion, garlic, sliced jalapeño - in this order. When onion is slightly brown, add the chicken and sauce well until slightly brown. Next add tomatoes, salsa, black beans and corn and cook well. Then add all the spices - paprika, turmeric, fajita seasoning. Cook for a few min and let the flavors all come together. Finally add broth or prepared buillion water and simmer for 10 to 15 min until all the ingredients are cooked and come together. Finally, add copped green bell pepper (I don't like to over cook this), taste for salt and adjust as needed. When almost done, garnish with cilantro. Your soup is ready.
When serving, serve generous amount in a bowl. Garnish with cubes of avocado, cilantro and chips. Can also add sour cream if needed.
Use organic ingredients. I purchased everything from Costco. I have mentioned approximate quantities, because I am an intuitive chef. I work with what I have.
