Here's a simple and healthy recipe for chocolate fit cake!

Makings:
3 eggs
1/2 cup coconut sugar or sweetener of your choice
1/2 cup coconut oil or olive oil
1 cup oat flour (you can substitute almond or whole wheat flour)
3 tablespoons unsweetened cocoa powder
1/2 cup skim milk or plant-based milk (almonds, soy, etc.)
1 teaspoon vanilla extract (optional)
1 tablespoon baking powder
1 pinch of salt

Preparation:
Preheat the oven to 180°C and grease a pan with coconut oil and oatmeal or line with baking paper.
Beat the eggs with the coconut sugar (or sweetener) until a homogeneous and white mixture.
Add the coconut oil, milk, and vanilla essence, mixing well.
Sift the dry ingredients: oat flour, cocoa powder, baking powder and salt. Add to the liquid mixture and stir until well incorporated.
Place the dough in the greased pan and bake for about 25-30 minutes, or until, when sticking a toothpick, it comes out clean.

1 can (14 oz/400 g) of diced tomatoes
4 cups of vegetable broth or water

Spices and Herbs:
1 teaspoon of turmeric
1 teaspoon of paprika
1/2 teaspoon of chili powder (optional for spice)
1/2 teaspoon of black pepper
1 teaspoon of dried oregano
1 teaspoon of ground cumin
Salt to taste

Garnish (Optional):
Fresh parsley, chopped
Lemon juice (to taste)

Instructions
