Sweet Alabama Pecan Bread

✅ Ingredients:
1 ½ cups granulated sugar

1 cup light brown sugar, packed

1 cup vegetable oil (or melted butter for a richer flavor)

4 large eggs

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp salt

2 tsp vanilla extract

1 ½ cups chopped pecans (toasted if desired)

🥣 Instructions:
Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper.

In a large mixing bowl, combine granulated sugar, brown sugar, and oil. Mix well until smooth.

Add in the eggs, one at a time, mixing after each addition. Stir in the vanilla extract.

In a separate bowl, whisk together flour, baking powder, and salt.

Gradually add the dry ingredients to the wet mixture, stirring just until combined.

Fold in the chopped pecans.

Pour the batter into the prepared baking pan and spread evenly.

Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.

Allow to cool completely before slicing into squares or bars.

🍯 Optional Topping Ideas:
Drizzle with warm caramel sauce

Sprinkle with powdered sugar

Serve with a scoop of vanilla ice cream

🌶️ 4. Spicy Shrimp Linguine
Ingredients:

200g linguine

200g shrimp (peeled and deveined)

2 tbsp olive oil

2 cloves garlic (minced)

1 tsp red pepper flakes

1 cup cherry tomatoes (halved)

Juice of ½ lemon

Fresh parsley

Instructions:

Cook linguine and set aside.

In a skillet, heat olive oil and sauté garlic and red pepper flakes.

Add shrimp and cook until pink (about 2–3 minutes per side).

Add tomatoes and lemon juice. Cook until tomatoes soften.

Toss in linguine and mix well.

Garnish with parsley and serve immediately.

Ingredients:

250g elbow macaroni

2 tbsp butter

2 tbsp flour

2 cups milk

2 cups shredded cheddar cheese

½ tsp paprika

Salt and pepper to taste

Breadcrumbs for topping

Instructions:

Cook macaroni and set aside.

In a saucepan, melt butter, add flour, and whisk until smooth.

Slowly add milk while whisking, cook until thickened.

Stir in cheese, salt, pepper, and paprika.

Mix in the cooked pasta and pour into a baking dish.

Sprinkle breadcrumbs and bake at 190°C (375°F) for 20 minutes until golden.

🍅 2. Classic Tomato Basil Penne

Ingredients:

200g penne pasta

2 tbsp olive oil

1 small onion (chopped)

2 cloves garlic (minced)

400g canned crushed tomatoes

Salt, pepper, and sugar (a pinch)

Fresh basil leaves

Parmesan (optional)

Instructions:

Cook penne until al dente. Drain and set aside.

Heat olive oil in a pan, sauté onion and garlic.

Add tomatoes, season with salt, pepper, and a pinch of sugar. Simmer for 10 minutes.

Toss in fresh basil leaves.

Add cooked pasta to the sauce and mix.

Top with grated Parmesan if desired.
