When I want something warm, nourishing, and comforting, this is one of my favorite recipes to make. This Mediterranean-inspired healing ginger garlic noodle soup is packed with flavor and simple ingredients that feel so good in your body.
It is cozy, soothing, and filled with ingredients like fresh ginger, garlic, bok choy, shiitake mushrooms, and spinach. Perfect for those days when you want something light, healing, and delicious.
Mediterranean Healing Ginger Garlic Noodle Soup
Ingredients
Broth Base + Aromatics
• 6 cups low-sodium vegetable or chicken broth
• 2 tbsp extra virgin olive oil or sesame oil
• 2-inch piece fresh ginger, peeled and grated
• 4 to 6 cloves garlic, minced
• 1 tbsp soy sauce or tamari
• 1 tbsp rice vinegar
Soup Components
• 6 to 7 oz rice noodles
• 1 cup shiitake mushrooms, sliced
• 1 bunch baby bok choy, quartered
• 1 cup baby spinach
Garnishes
• Sliced green onions
• Fresh cilantro
• Red chili flakes
• Fresh lime juice
Instructions
1. Brown the mushrooms in 1 tbsp oil for about 4 minutes, then set aside.
2. In the same pot, sauté ginger and garlic in the remaining oil for 1 to 2 minutes until fragrant.
3. Add broth, soy sauce, and rice vinegar. Bring to a simmer.
4. Add noodles and bok choy. Simmer for 3 to 5 minutes until tender.
5. Stir in spinach until wilted.
6. Ladle into bowls and top with mushrooms, green onions, cilantro, chili flakes, and fresh lime juice.
