I made chicken nuggets in the air fryer! Using plant chicken pieces and my own breading and batter.

4 oz plant chicken pieces, thawed

Liquid:
- 1/2 cup unsweetened almond milk
- 1 tb ground flax seed
- seasoning to taste (I used garlic powder and Trader Joe’s umami seasoning)

Flour:
- 1/2 cup tapioca starch
- 1/4 cup almond flour

Breading:
- 1/2 cup course corn meal
- seasoning to taste (I used garlic powder, onion powder, white pepper, and Trader Joe’s umami seasoning)

Mix ingredients for liquid and flour and breeding separately. Dip chicken pieces into liquid to coat, then into flour mixture, then into liquid again, then into breading.

Lay breaded pieces into air fryer basket in oneone layer. Spritz lightly with mildly flavored oil.

Air fry for 12-15 minutes at 360° F for 13-15 minutes. Flip halfway through.

Enjoy as-is or with your favorite dipping sauces!

Yields 2 servings. 250 calories, 15 g protein, 34 g carbohydrates, 6 g fat, 5 g fiber.

Quite possibly one of the most painful sequences we’ve done since pre-pandemic. The digging of the hoop into the IT band, inner thigh, and ankle almost makes me not want to do this but the shapes are so cool!

For the private I taught today, I put together the (aka ) sequence and this top bar split (name unknown), the latter of which we did almost exactly two years ago. And then I added the just because I could. But holy scraping the skin of my back in the slide down. 😫

Don’t forget - has one-on-one private sessions for pole, hoop, flexibility, conditioning and more!

Support a struggling small business whose future is very uncertain, and buy yourself or a friend or family member private sessions!

You can also support and YPS by donating to the GoFundMe (link in bio)!

Pretty much the same sequence as last Sunday but includes the mount and dismount, and refining some of the movements and transitions in the hoop. I think this is probably a little more fluid. Keeping the audio on for ’s exuberant reactions! 😂💜

When work-from-home began for me in the middle of March of this year, I took it as an opportunity to both explore and support the vegan-friendly restaurants in my neighborhood.

Some favorite vegan-friendly take-out from local restaurants in Crown Heights, Brooklyn. Most Asian- or Black-owned.

Got to take / class from today and we explored some musicality and synchronization together with this sequence incorporating and .

You, too, can take private aerial hoop and classes with Carolyn at in Downtown Brooklyn! Or buy privates as a gift to a friend or loved one! Help keep YPS open, as the future of the studio is still uncertain and VERY MUCH a struggle. Or donate to the GoFundMe (link in bio)!

A different longer sequence from yesterday that came out of some freestyling and seeing what skills I can still do. Surprised I could still do the and easily getting into the !

Slowly, but surely, I’ll get the rest of last summer’s travels up on this blog – maybe just in time for me to leave for this upcoming summer’s trip to Europe! But for now, I’m recapping the third leg of my trip – two cities in Austria: Salzburg and Linz!

Oops. I stopped updating this blog in December 2018. Life got a little hectic, but now I want to get back to regular (or at least semi-regular) posts here.

One of the biggest things to have happened in the past seven months is that I took my second-ever trip outside of North America – to Europe! For a big milestone birthday, I decided to spend my actual birthday in London, and then visited Munich, Salzburg, Linz, and Prague.

Doing nutrition workshops with the Wendy Hilliard Gymnastics Foundation has been one of highlights of the past year - teaching kids about balanced meals and healthy eating to not just be healthy but to help their gymnastics!

It's National Nutrition Month! SNEAKER (Super Nutritional Education for All Kids to Eat Right) is a nutrition education program, developed and implemented by HSS, for New York City children. The program, which provides education about healthy eating, conducts interactive lessons to teach students about the importance of eating a healthy, well-balanced diet. Hope those of you in the U.S. who celebrated Thanksgiving this past week had a nice holiday, whether it was with family, friends, or some needed alone time! Holidays such as Thanksgiving tend to revolve around food, but it doesn’t necessarily have to either! To me, Thanksgiving is more about acknowledging the things in your life that you are grateful for.

But one of the things I am grateful for is good food — specifically, good VEGAN eats!

So, I’ve missed a couple of weeks of posting my Vegan Eats of the Week series, but the first time, it was because I didn’t have any foods that were new or worth mentioning again, and the second time, I had a bit of a hectic week.

But now I’m back and I have a little over two weeks worth of vegan goodies to share!

Eating out at a sit-down restaurant doesn’t happen nearly as often as I would like, especially given the abundance of restaurants in NYC and the plethora of cuisines from all over the world.

Another week passes, creeping closer to the winter holidays, which makes me simultaneously excited and nervous! How has 2018 flown by so fast? Even though it is now officially autumn, the weather in NYC is still warm and I’m hanging onto summer as long as possible.

Having a Vegan Eats of the Week blog series seemed like a good idea to try! I’m constantly trying new things around NYC and especially when I am traveling. It’s always fun seeing what new goodies I can find and actually eat!

Big news! Plant-based meals are officially coming to every hospital in California! Thanks to Gov. Jerry Brown, who just signed SB 1138 into law, , Sen. Nancy Skinner, and all who supported the bill!
