I am a Registered Dietitian (RD) with a Masters of Science in Nutrition and training in general medical nutrition therapy, who specializes in the treatment of eating disorders and sub-clinical disordered eating. In honor of Black History month, this dietitian wants to recognize Frederick McKinley Jones as an American of merit. Through his work at an auto garage, he ended up revolutionizing an entire industry. Because of his invention, we can transport products at safe temperatures. His innovation was also used by the US Defense Department in World War II.

In addition to transporting FOOD, drugs, and blood plasma, the cooling systems were used to air condition field hospitals and cockpits. Nearly 100 years later, his invention helped deliver lifesaving vaccines to communities during a global pandemic. (text partially taken from thermoking.com).

Because of this man's contributions, food can be safely delivered far distances. Food availability is essential for good health and nutrition. Thank you Mr. Jones!

If you're feeling frustrated by your journey, take a deep breath and check in with someone you trust who can help you get the perspective you need to stay motivated and keep going because the path winds and turns and sometimes needs a detour towards more support. It is uniquely your journey. Just keep one foot in front of the other.

That's why we work with everyone to bring these foods back into the light, onto the table and out in the open.
