If beans usually leave your stomach feeling uncomfortable, this is worth trying. Soaking beans before cooking helps reduce phytic acid and certain complex sugars that are harder to digest and often responsible for bloating and gas. Adding a pinch of baking soda or a splash of apple cider vinegar to the soaking water helps soften the beans and start breaking down those compounds before they ever hit your gut. After soaking, be sure to rinse well and cook as usual. The result is beans that are gentler on digestion, easier to absorb, and far more enjoyable to eat.
