An oldie but a goodie. Here's a recipe for a delicious pumpkin pie pudding with no added sugar and no fat. Pumpkin is a great source of fiber and beta-carotene.

What's in a muffin?
This Fiber One muffin contains just about everything the health-conscious muffin lover looks for. Just read the package: Whole grains! Wild blueberries and oats! 28% of the Daily Value of Fiber! All at 1/4 fewer calories than the leading muffin! So what could be bad about making this muffin the core of your breakfast or an afternoon snack?

How about the 16 grams of sugar in every single muffin? That's 4 teaspoons of sugar, just what you want to avoid if you're trying to maintain a healthy weight and fight diabetes. Especially if you eat two or three.

Nothing is as warm and homey as an apple concoction. This traditional tarte Tatin, however, starts with apples cooked in butter, so it's sky high in fat (450 cals & 19 gms fat). The Warm Apple Compote captures the same comforting apple flavor accompanied by brown sugar and nutmeg tapped by the cool sweetness of frozen yogurt, and at half the calories and fat. See recipe below.

Ingredients:
1 tbsp. butter
2 tbsp. packed brown sugar
1/8 of a teaspoon ground nutmeg
4 crisp apples such as Fuji, Braeburn, or Gala, peeled, cored, and cut into 3/8"- thick slices
1 cup low-fat vanilla frozen yogurt or soy alternative
1/4 cup chopped toasted pecans

Melt the butter in a large Skillet over medium heat. Add the brown sugar and nutmeg and stir until smooth. Add the apples, cover, and cook, stirring occasionally, for 8 minutes, or until the apples are tender.
Spoon the apples into dessert bowls. Top with the frozen yogurt and pecans.

Makes 4 servings. 230 cals and 9 grams of fat per serving.

Like appetizers? The smoked salmon choice gives you a far bigger portion, plus diverse tastes and a real health hit. Salmon is an excellent source of omega-3 fatty acids, which are essential for heart health, the immune system, & disease fighting.

The salmon's good fat contrasts favorably with the pate & cheese's high concentrations of bad saturated fat. It means the pate and cheese square offer a little bit of food at a high cost of the least healthy kind of calories.
