Ingredients:

For the Red Velvet Cake:
1 ΒΌ cups all-purpose flour
1 cup granulated sugar
1 tbsp cocoa powder
Β½ tsp baking soda
Β½ tsp salt
Β½ cup vegetable oil
Β½ cup buttermilk
1 large egg
1 tsp vanilla extract
1 tsp white vinegar
1 tbsp red food coloring

For the Cheesecake Layer:
16 oz (2 packs) cream cheese, softened
Β½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
Β½ cup sour cream

For the Strawberry Topping:
2 cups fresh strawberries, sliced
ΒΌ cup granulated sugar
1 tbsp lemon juice

For the Cream Cheese Frosting (Optional):
8 oz cream cheese, softened
Β½ cup unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract.

Instructions:

Make the Cheesecake Layer:
Preheat oven to 325Β°F (163Β°C). Line a 9-inch springform pan with parchment paper.
In a large bowl, beat cream cheese and sugar until smooth.
Add eggs one at a time, mixing well after each addition. Stir in vanilla and sour cream.
Pour the batter into the prepared pan and bake for 30-35 minutes, or until the center is set.
Let it cool completely, then refrigerate for at least 2 hours.

Make the Red Velvet Cake:
Preheat oven to 350Β°F (175Β°C). Grease a 9-inch cake pan.
In a bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
In another bowl, mix oil, buttermilk, egg, vanilla, vinegar, and red food coloring.
Gradually add the dry ingredients to the wet, stirring until smooth.
Pour batter into the cake pan and bake for 30 minutes, or until a toothpick comes out clean.
Let the cake cool completely.

Prepare the Strawberry Topping:
In a saucepan, combine strawberries, sugar, and lemon juice over medium heat.
Stir and cook until strawberries soften and release their juices (about 5 minutes).
Let cool before using.

Assemble the Cake:
Place the red velvet cake layer on a serving plate.
Carefully place the chilled cheesecake on top.
Spread the strawberry topping evenly over the cheesecake.

Frosting (Optional):
Beat cream cheese and butter until fluffy.
Gradually add powdered sugar and vanilla, mixing until smooth.
Pipe or spread frosting around the edges of the cake.
Decorate with fresh strawberries on top.
