Ingredients:
✔ 2 large sweet onions, finely chopped
✔ 1 cup all-purpose flour
✔ 1 tbsp sugar
✔ 1 tbsp cornstarch
✔ 1½ tsp baking powder
✔ 1 tsp salt
✔ ½ tsp black pepper
✔ ¾ cup whole milk (adjust as needed for batter consistency)
✔ Vegetable oil, for frying
Directions:
1️⃣ Prep the Batter: In a large mixing bowl, combine flour, sugar, cornstarch, baking powder, salt, and pepper. Whisk until well mixed.
2️⃣ Add the Onions: Stir in the chopped sweet onions. Pour in the milk and gently mix until you have a thick, sticky batter. Add a splash more milk if needed to bring it all together.
3️⃣ Heat the Oil: Pour vegetable oil into a skillet to a depth of about ½ inch and heat over medium-high until shimmering (around 350°F/175°C).
4️⃣ Fry the Fritters: Drop spoonfuls of batter into the hot oil. Flatten slightly with the back of the spoon. Fry for 2–3 minutes per side or until golden brown and crispy. Work in batches to avoid overcrowding.
5️⃣ Drain & Serve: Transfer fritters to a paper towel-lined plate to drain. Sprinkle with a little extra salt while hot.
6️⃣ Serving Suggestion: Serve warm with ranch, sour cream, or spicy ketchup for dipping. They're also fantastic as a crunchy side to soup or burgers!
