Nutrition science is ever-evolving as we continue to research and learn more. But above all, it has to keep in mind how to better the health of the general population in realistic, sustainable ways.

Not only is this new pyramid flawed and contradictory, but it’s also difficult to conceptualize and doesn’t take into account issues of food access or affordability.

Food is NOT as simple as just “eat real food!” Enjoyment and access are major aspects too.

Seed oils are oils made from plants like sunflower, canola, and soybean. They’re high in polyunsaturated fat, and specifically, omega-6 fatty acids.
 
Research has shown that choosing foods with omega-6 fatty acids – like seed oils - in place of saturated fat like butter (and yes, beef tallow) has beneficial effects on our health (PMID: 29741564).
 
While I’m not suggesting you exclusively use and cook with seed oils, they also aren’t toxic or something that you need to avoid like the plague. Zoom out: health is about the entire picture of our diet and lifestyle – not a single oil that we consume on occasion by Growing a Healthier America — an organization that works to spread credible food and nutrition information.
