The best food is often fresh food. That is why eating seasonal produce is ideal.

Watercress is an aquatic vegetable. I often use watercress as a garnish for a bit of a fresh spicy flavor and in salads. Watercress is invasive in the U.S. so if you find it, please eat it to help the environment. πŸ˜‰ealth benefits as asparagus is rich in fiber and folate.

Stinging nettles are something you want to avoid rolling in when on a hike, but they have several medicinal benefits when prepared properly (you need to heat them so the irritating chemicals are destroyed). Stinging nettles can help reduce inflammation which can help those who have arthritis or other ailments caused by inflammation. Another interesting fact is that stinging nettles are one of the most nutrient-dense wild foods - they even have more protein and calcium than kale! They are also a fantastic food to eat, drink (as tea), or possibly take a tincture, for seasonal allergies. (Check with your doctor).

Happy Mother's Day! I have something for you mom-hearts, so read through to the end.

Last year I sent an email where I did my best to acknowledge all moms, which to me includes those who have a mama's heart, who may have lost a child, who have longed for motherhood amidst a journey of infertility, or those who may not have their own children, but fill the role of mother to someone. There are many ways to be a mom and I want to acknowledge ALL of you out there. Particularly those who are feeling gray today.

Happy Mother's Day to my mom! I would not be the woman I am today without her! She is the purest example of Christ's sacrifical love that I have ever witnessed. I would not have survived my first year of motherhood without her love, help, and support.

Happy Mother's Day to my mother-in-law who I am thankful I actually like and get to see often. Not to mention she raised a wonderful man I get to be married to.

Happy Mother's Day to my grandma who I cherish and feel fortunate to have such a special relationship with!

And thank you to Summer for making me a mama and giving me the opportunity to learn and grow over the past 3.5 years!

Happy Birthday to my husband, Ryan!!!

When I was pregnant with Summer, Ryan and I were apart for most of my pregnancy. I was working out of state as a personal chef. So in many ways this is a new experience for us being together full time during my pregnancy. And WOW has this been a different pregnancy!

He's obviously very good-looking. πŸ˜‰ He is a phenomenal father! He is so, so, so good at his job and is lucky to have him on staff. And he is incredibly talented! Ryan has the ability to learn pretty much anything he sets his mind to from working on a car, to remodeling a house, to making his mom a vegan cookies and cream layer cake for her birthday. Honestly, sometimes it's just annoying because what is he not good at? haha! But also, I'm really proud of him! (and he's handy to have around)

Other than his mom, my mom, and his siblings, not sure how many people are still reading me gush about my husband, but I really don't do this often and felt like his birthday was a great time to go public with how great he is.

Over the past 15+ years as a couple and 9+ years married we've had some serious low spots, but he has stuck by me, been willing to go to counseling, and loved me through it all.

I hope he has an INCREDIBLE birthday and feels loved beyond measure today and throughout the next year, which brings a new chapter of our life as we add to our family.

Why plant-based?

This is a question I get asked frequently. Why do I eat plant-based? Why do I encourage others to eat as plant-based as possible? What's so great about eating plant-based?

The science and research has shown that plant-based diets have some amazing health benefits. The most comprehensive nutriton study ever completed, The China Study, was a book that changed my life.

But more than a book, my personal experience convinced me. When I began eliminating animal products, I felt better. The more I transitioned to a plant-based diet, the better I felt. My engergy increased, my mood improved, my mind was able to focus better and overall I just felt stronger and healthier. That is a feeling I loved. That is a feeling I want others to experience.

I eat plant-based for me, for the environment, for the animals, to take care of God's creation the best I know how, and to be well for my family.

How can you support the plant for earth day?

Choose plant-based! Plant-based and vegan diets help our environment by:

🌎 Conserving water: animals use more water to produce the same calories as vegetables, fruits, nuts, etc.

🌍 Keeping the soil clean: Hormones and additives given to animals can come out in their manure and leach into the soil. 😝

🌏 Lowering greenhouse gas emissions: It takes a lot of fossil fuels to run factory farms, slaughterhouses, butcher shops, etc. When you stop eating meat (or cut down your consumption), you can help decrease greenhouse gas emissions.

Let's help our shared earth by making more vegetable-forward diet decisions!

Personally, as a Christian ✝️ I believe the earth is God's creation. I am very convicted that I have a responsibility to take care of this planet as part of my faith. Eating a plant-based diet is one major way I'm able to do that.

Let's go there. Yes, that's right it's April 20th (420) and I'm talking about w**d. It is a pant after all that more people are consuming.

Are there health benefits?

There is no confirmed information but studies point to possible health benefits from this plant. Out of more than 120 cannabinoids in cannabis, the two most researched cannabinoids are cannabidiol (CBD) and tetrahydrocannabinol (THC). CBD is a non-intoxicating, non-euphoric component that is used for medicinal purposes.

Some of the believed benefits of CBD include:
🌱 Lower blood pressure: CBD has been found to reduce resting blood pressure and pressure during stress tests.
🌱 Reduce inflammation: it has been seen that CBD can reduce inflammation and neuropathic pain.
🌱 Lower stress: anxiety is one of the most common afflictions that CBD is used to treat, including panic disorders, social anxiety, obsessive-compulsive disorder, post-traumatic stress as well as general anxiety disorder.
🌱 Treat gastrointestinal disorders: CBD and other non-psychoactive cannabinoids have been seen to effectively treat GI disorders including irritable bowel syndrome, inflammatory bowel disease, Crohn's ulcerative colitis, and others.
🌱 Aid in cancer-fighting: CBD has been seen to alleviate the effects of chemotherapy and some studies have found it can prevent cell growth, possibly even inducing cell death.

I am not an expert on this specific plant nor am I trying to endorse it. Most of the studies I have seen were conducted over a relatively short amount of time and it's important to see more data as to the long-term implications of utilizing ma*****na as well. I think there is potential for its use in specific situations.

All this to be said, do you know what else has A LOT of evidence-based science behind it for reducing blood pressure, reducing inflammation, treating GI disorders, preventing cancer, and promoting cognitive health .... a plant-based diet!

So while cannabis has become a trendy item and has potential benefits that are being investigated at the end of the day I will continue to advocate for eating more plants!

You are dehydrated! How do I know that? Okay, truth be told I do not know for certain, but of all the clients I work with 1-1 I'd say 80+% have started out dehydrated.

You're not alone in being dehydrated. But I guarantee your cells would LOVE YOU if you showed them some love just by picking up your water bottle throughout the day.

Dehydration can lead to:

STRESS... it's what's for dinner! Can you relate?

Why do I eat plant-based?

From over a decade of research and lived experience I believe this is the best thing I can do to prevent disease and live the healthy life I desire.

People have joked with me about wanting to live forever. I have no interest in living forever on this earth. But while I'm meant to be here I want to truly live and to thrive. I do not want to spend needless hours at doctors and unnecessary money on medications.

Can I tell you the best gift I got in 2021?

Having the additional time to myself has allowed me to get back to starting my day (after she leaves) with Jesus. I have found my life is so much better when that is how I fill my cup. So as I continue to reflect on 2021 as a year I feel immense gratitude that Summer gets to have fun, have friends, and learn, at her school every day. And I have been able to come back to a relationship with God and myself that felt like it was gone for a while.

A year ago Summer was with me all the time (with some breaks thanks to her awesome Nani who lives nearby). Ryan was phasing back to working in person and I was left with the privilege (it did not feel like a privilege) of spending my days with my wonderful daughter AND trying to work a solopreneur biz full time (which I find takes more than 40 hours a week).

Oh yeah, and I was (and still am) getting my master's so taking classes on top of it all.

Then we made the decision I was resisting of putting Summer in school (preschool/daycare).

Having the additional time to myself has allowed me to get back to starting my day (after she leaves) with Jesus. I have found my life is so much better when that is how I fill my cup. So as I continue to reflect on 2021 as a year I feel immense gratitude that Summer gets to have fun, have friends, and learn, at her school every day. And I have been able to come back to a relationship with God and myself that felt like it was gone for a while.

I didn't grow up eating plant-based. It's funny to me when someone assumes I did. But how would you know that I didn't? 🀷

I discovered plant-based nutrition in 2007 (14 years ago). I was studying Foods & Nutrition , but it was my cousin Anna who gave me a couple of books, which little did I know, would change the trajectory of my life.

The China Study by Dr. T. Colin Campbell and Eat to Live by were the books that made more sense than any food pyramid ever did.

What was my journey like in the beginning? I wasn't eating a vegan diet from the start, but I made some big changes very quickly.

πŸ‘‰I bought a case of soy milk to keep in my dorm.
πŸ‘‰I stopped eating meat.
πŸ‘‰It was several years later I chose to no longer eat fish.

It wasn't overnight, but I was convicted of the direction I wanted to head.

Have I ever regretted it? Not a single day.

I have wondered what life would be like if I still "ate everything" and I have a feeling I'd be walking more toward disease than health.

I'm so incredibly grateful for my life, my heatlh, and my work helping others find the health they deserve as well.
