I learned about this great company, Imperfect foods, last fall. They started in 2015 with a mission to eliminate food waste and build a better food system for everyone. What do these dates actually mean?
“Best if used by” and “best before” indicate when a product will be of best flavor or quality. It’s not a purchase or food safety date.
A “sell by” date tells the store how long to display the product for. It’s not a food safety date.

This is such a great time in Maine when the farm stands are filled with local produce. I love 3 bean salad and this version from Eating Well is much lower in sugar. I typically make the green bean, chickpea, edamame version and it is always a hit! I have both green and yellow beans ready in my garden so I am going to use both when I make this recipe again very soon. Enjoy!

This three-bean salad has far less sugar than typical versions. We opt for a combination of canned and frozen beans (for convenience) along with fresh green beans for their great taste and texture.
