this is an easy and delicious salad recipe that I’m going to share a really quickly
Throw together a Dijon maple salad dressing by mixing olive oil, salt and pepper, Dijon, mustard, maple syrup, and red wine vinegar to taste.
throw it in a bowl with your lettuce, beets, red onion, leftover chicken, asparagus or something of that variety. I also put some feta cheese, but it would also be delicious with goat cheese.

I usually snack on them plain, but today I paired them with a quick leftover salmon salad—SO good! 🐟✨
Just mix leftover cold salmon with a little fresh chopped dill, lemon juice, and either mayo or plain Greek yogurt. Simple, fresh, and satisfying! 🙌

I have been making the most delicious breakfast casserole. It has been making my mornings so much more efficient and less chaotic😆 no more scrambling eggs and cleaning pans at 7am!

I modified it slightly by using 99% lean ground chicken instead of ground pork to cut back on saturated fat.

Loving this winter salad, using radicchio as the base! It’s so great to vary your diet by using different vegetables, we highly recommend giving this one a try. The bitter flavor pairs, well with a delicious cheese, olive oil, walnuts, apple slices and red wine vinegar.
