Funny how most of the high nutrient foods (and even less nutritious) are not sitting with me. Sometimes you gotta eat plain ass stuff. Like chicken and white rice and carrots and broth. High fiber foods aren’t always good for people and sometimes you just eat what you can. Probably need a doctor at some point..

Easy Sweet Potato Kale Frittata 🍳

This can be made with these ingredients or add other ones but I thought it was so good. If you’re looking for something simple with protein, fat, and fiber, this is a great meal! I used frozen and pre chopped veggies and bought eggs already whipped to make it easier on me with my fatigue and dizziness from ME/CFS and Dysautonomia. I used a cast iron pan.

Preheat oven to 380-390F (every oven is different)

- 2 cups frozen chopped sweet potato 🍠
- 1/2 chopped onion 🧅(or pre chopped)
- 1 tbsp or more chopped garlic 🧄 (I used the one you buy instead of chopping my own)
- 1.5 cups Pre chopped kale 🥬 (I froze mine and just pulled the stems off)
- 1/3 cup feta cheese 🧀
- 2 cups beaten eggs 🥚
- Olive 🫒 oil and avocado 🥑 oil to coat the pan

I heated a cast iron pan to medium heat
Coat the pan with a little olive and avocado oil.
Sauté onions and frozen sweet potatoes. Then add garlic once those are cooked a little more (maybe 8-10 min).
Cook the kale a couple minutes.
Add pepper and salt for a little extra flavor.
Add the eggs.
Add the feta.
Bake in oven for 15 min or until the eggs are set and not runny. Make sure to check so the eggs don’t get over cooked. Every oven is different.
Let set for 10-15 min and enjoy!
Add hot sauce!

Recipe for my protein and omega rich overnight oats:
- 2 cups organic rolled oats
- 2 tbsp chia seeds
- 1 tbsp ground flaxseed
- whatever organic grassfed protein powder you like (I used grassfed beef collagen)
- 1/2 tsp salt
- 1/2 tsp cinnamon or more if you like! I use Ceylon Cinnamon - better for liver and flavor
- 1 tsp honey or a 1 tbsp maple syrup
- 2.5 cups almond milk or other milk

Stir it up and shake it up and leave in fridge for a few hours or overnight. You can double or triple the recipe. This recipe fits in this ball jar.

This is high in fiber, omegas, protein, vitamins and minerals. Heart and gut healthy.

I microwave mine and add berries for extra antioxidants.

It’s nice to have made a couple jars so you have it ready to go if you’re low on energy, like me, all the time. What do ya think?

Going from life before to now…

With chronic illnesses we want to feel better now. Adapting to a slower pace of life is something maybe we could really ALL do. But, moving this slowly after being a very active human is painful. The resistance to do what we need to do in the way it needs to be done is real. Patience and grief at the same time is extremely frustrating.

It’s hard to see who you were before. It’s hard to know you can’t be that person again. But, I have grow so much in other ways. There’s still a lot of life left to learn and live.

I made a thing. Less rich and less fat if you need less.
- 1.5 cups Quinoa pre cooked
- 16oz egg whites
- 1.5 cups shiitake mushrooms
- 2 cups spinach
- 1/3 cup Parmesan
- butter and olive oil to cook veggies in pan first
- any spices or herbs you want (salt/peppper/cracked red pepper/etc)
- garlic or garlic powder

I cooked the veggies and mixed all the ingredients together. I greased a casserole pan and preheated the oven to 350, but could go a little higher.

I cooked it for close to an hour actually. Just keep checking it to make sure the top middle is cooked through. Should be not liquid and little bouncy. Make sure to cool for 15 min after.

Cervicogenic issues are more problematic than you may realize. I am on a mission now. This all came up after watching talk about how many providers are not diving into neck enough. I’ve had some work done on my neck and seen many people but nobody to go diving deep enough.
