This lazy girlโ€™s day off dinner was quick and easy to pull together! Some quick chops of broccolini, peppers, onion, potatoes, garlic and tomatoes, drizzled with olive oil and roasted at 425 degrees, are making the bulk of dinner tonight. Iโ€™m going to serve this with instant pot quinoa. 10 minutes of prep time, and an hour of Cook time. And I will have lots of leftovers for lunches. ๐ŸŒฑ๐Ÿ

I love summer veggies so much! ๐Ÿ… ๐Ÿฅ’ ๐ŸŒฟ And a simple breakfast of toast with juicy cucumbers, tomatoes, and basil, fresh from the garden, is heaven to my taste buds! ๐Ÿ˜‹ I like to do thick slices, and to pile them high as I eat, so I get more flavor with each bite.

Itโ€™s cucumber ๐Ÿฅ’ season! Do you know what that means? fermented pickles! ๐Ÿคฉ Theyโ€™re great for your gut microbiome and oh so delicious! ๐Ÿ˜‹ Chop up your fresh garden jewels ๐Ÿฅ’ (you can try other veggies too!) and add them to a glass jar. Fill with salt brine (1 tablespoon salt per cup of water), making sure that your cucumbers stay fully submerged throughout the fermentation process. I always sneak a taste test at about a week, to see how theyโ€™re doing, but it usually takes about four weeks or so to get the full fermentation. And itโ€™s very important to remember to keep your jars๐Ÿซ™ loosely tightened, or to โ€œBurpโ€ them (Open the lid to let off the fermentation gasses) daily. Store in the fridge when theyโ€™re done fermenting.
