Thursday's are super busy days for me. Lunch looks like leftover sauce over spinach.
The hot sauce wilts the spinach in a fun way and the protein in the tomato sauce will keep me going until dinner.
It doesn't have to be fancy or complicated to be yummy and nourishing.

It has been unseasonably warm here in the PNW. I'm talking upper 80's in May and June and while it's been glorious, my desire for cooking seems to be directly tied to the temperature. As in, it's balls hot in my house, I don't wanna cook.
My solution......
Breakfast salads have been my answer for quick, cool and nutrient dense ways to start my day.

So, if any of you have been watching my weekly CSA videos, you'll see that there's a lot of veggies!!
This week, I made some GF zucchini muffins (I use oat flour and sweetened them with maple syrup, some had a few chocolate chips on top)
I put up some refrigerator pickles- SO fast and will last through the summer!
I made some savory zucchini "fritters" (I baked them) with parmesan cheese, onion, garlic, egg.
And a Kale and sprouted quinoa salad that also has the turnips and the green onions. I also added some pine nuts, and tossed it in a simple homemade vinaigrette. This salad will last all week!
I still have lots of veggies to use for the rest of the week!!

Going to the farm is the highlight of my week.
I love the drive down through the beautiful Snoqualmie valley.
I love seeing the fields full of lovingly grown, nutrient dense vegetables.
Walking into the barn feels like Christmas morning...what gifts are Farmer David and team going to gift us this week??
As always, they do not disappoint!

For realz....this sauce is amazing on seafood, veggies, meat, on a spoon! Its the LBD of sauces...goes with everything!! Do yourself a favor and make some!! It holds well in the fridge, if it makes it that long!

This is one of my absolute favorite recipes! Fool proof, simply ingredients and so dang delicious! You could sub the milk with coconut milk if you can't do dairy. However, I caution you against using a low fat version of whatever milk you use.
Perhaps an odd combination but Chicken in Milk is a fantastic recipe that must be tried; it's a simple chicken dish, great served with potato and veg.

I am excited to be hosting a virtual 5 week RESTART class starting Saturday May 23rd from 10am-11:30am I know that I have been struggling with eating extra sweets and enjoying a few more cocktails than normal, and let's be honest, nothing about what's going on is normal! And while eating and drinking delicious things during a global pandemic IS NORMAL and FUN, I am feeling ready to shift back into an eating style that helps me feel my best. This might be the LAST thing you are interested in right now- it takes work, requires change, and time preparing meals- I recognize that these might be three things you do not have the bandwidth for. I, like so many of you reading this post have spent the majority of my life in an adversarial relationship with my body and with food. Always seeing my flaws and imperfections, not my gifts or beauty.
I can remember back to diary entry’s I made in third grade (8 years old!) that talked about not liking my body, wanting it to look different and wanting to feel different- I wanted to feel beautiful, healthy, worthy and confidant. I still want to feel all these things, and I do for the most part, but the road I took to get here was not easy to navigate- it was full of U-turns, dead ends, potholes, and fog- fog so thick that I just had to move forward on faith- faith that the journey would be worth it, even if it wasn’t easy, even if I wasn’t always sure where I was going, or how long it would take me to get there, or honestly, what was even waiting for me on the other side.
How many of you have found yourself on a similar journey? A journey towards loving your body, valuing your body, and learning how to eat foods that nourish - physically, mentally and emotionally?
It’s my experience that many women start this journey- but it’s so hard to navigate through the fog that many of us get lost and stay where we are.
As someone who has lost and gained weight more times than I care to count, as someone who has battled low self-confidence, feelings of not ever being good enough, pretty enough or worthy of love- I stand here- a beacon of hope on the dark road, I overcame these feelings and so can you! I want to help you feel joyful, energetic, and beautiful!! The only road that leads to lasting health and wholeness is a road that leads us to nourishing, honoring and healing our body.
I’ve tried it all, you’ve tried it all! And none of it lasts! The not eating, the only eating chicken breast and broccoli, protein shakes, crazy workouts and the negative self-talk that comes along with trying to beat your body into submission!
There is another way and I want to be your guide, your support and your biggest cheerleader as we work together to change how we talk to our bodies, how we feed our bodies and how thru this rebellious act of self-love, we can live a more joyful, confident and healthy life. You don’t have to go it alone.
