And so wraps our beautiful time in Puerto Rico, filled with morning walks, long lengths of back stroke taking in the bluest sky, time with family and friends, some decent spells of work, adventure, and rest all in good measure. And coming into our house last night was like walking into a big hug.

When you have a stem cell transplant to save your life, you are given a new birthday.
Today marks two years since that auspicious day, when I received the perfect progenitor cells from MAYA and began my remarkable trek back to pristine health and vitality. At the 100-day post-transplant, considered an important milestone, I was called up to the pulpit at my synagogue, where I took a new name in front of my Hebrew name, as a way to nudge the Angel of Death off my case! I also shared a sermon on the reading from that week, and received blessings for good health. The name I chose is AVIV, which means spring and rebirth, which just about says it all.
I decided even before she was born, to have my granddaughter call me AVIVI, as a way to keep fresh my appreciation and gratitude for another chance, for this miracle of life—my own, Paul’s, that of my amazing grown children & their wonderful partners, and of course my granddaughter! Now, when she calls me, sometimes with excitement, sometimes with a demand, sometimes emphasizing one syllable over another, often with her strong but mighty arms outstretched, and always with love, I know I chose exactly right and wear the name with immense presence to all the miracles that abound.

3 large eggs1/2 CUP MAPLE SYRUP OR HONEY1/3 CUP GREEK YOGURT2 TSP VANILLA EXTRACT1 TSP BAKING POWDER1 TSP BAKING SODA1/4...

3 large eggs
1/2 CUP MAPLE SYRUP OR HONEY
1/3 CUP GREEK YOGURT
2 TSP VANILLA EXTRACT
1 TSP BAKING POWDER
1 TSP BAKING SODA
1/4 TSP SALT ( OR LEAVE OUT IF YOU DON’T USE SALT MUCH)
ORANGE OR LEMON ZEST, OPTIONAL
3 1/3 CUPS + 1 TBSP ALMOND FLOUR 
1 CUP BLUEBERRIES FRESH OR FROZEN
COOKING SPRAY
 
Mix the dry ingredients in one bowl, the wet in another and then combine. Fold in berries last.
 
This quick, high protein, low refined carb muffins are delish and freeze well, too. I often make double the batch.  I have also spread thin in a baking tin for a little cake. They’e been fun to box up and give as a holiday gift, too.
 
Bake at 350 for 10 min or until a toothpick comes out clean.
 
I do recommend using muffin tin liners and spraying them well, as the batter tends to stick. You can use any kind of berry, but I have found blueberries the best, with the little pop of flavor and juice.
