Please welcome Danielle, our summer intern!

My name is Danielle, and I am entering my junior year at Endicott College, where I am pursuing a bachelor’s degree in Exercise Science. I chose to intern here because of my own personal experience with a concussion. After trying numerous treatments with little success, a friend recommended this clinic—and for the first time, I began to see meaningful improvement. That progress sparked my curiosity about the science behind the methods used here. I wanted to understand why the treatment was working so well, which ultimately led me to pursue this internship. For fun, I like to play with my dog, go to the gym, and try new recipes. CHICKEN TENDERS AND MASHED “HIDDEN VEGGIE” POTATOES
No additives, sugar, gluten, corn, milk, or soy!

Makes 3-5 servings
Chicken Tenders
• 1 lb skinless, boneless chicken breast
• 2 eggs, whisked
• ¾ cup millet flour
• 1 tsp dried rosemary (optional)
• 1 tsp garlic powder
• ½ tsp sea salt
• ½ cup chicken fat, ghee, or beef tallow

Mix the millet flour, garlic powder, sea salt, and optional dried rosemary together in a bowl. Melt the fat in a skillet over medium heat. Slice the chicken into strips about 3 inches long and 1 inch wide. Dip the strips in the egg, and then the millet flour mixture. Place gently in the hot skillet. Cook about 3-5 minutes on each side or until nicely browned. Place on a plate to cool.

Mashed “Hidden Veggie” Potatoes
• 10 small to medium potatoes, peeled
• 2 large carrots, peeled
• 6 large cloves of garlic
• ½ cup melted ghee or butter
• ½ tsp sea salt

Boil all the vegetables until soft. Blend in a food processor with melted ghee or butter.

HIDDEN VEGGIE PIZZA!
Makes 4-6 servings

Whole foods-based recipes with no additives, sugar, gluten, corn, milk, or soy!

Preheat the oven to 475 degrees F
Dough:
2.5 tbsp psyllium husk powder
1 ¾ cup lukewarm water
¾ cup millet flour
½ cup sorghum flour
1 cup arrowroot powder
1 tbsp honey
1 tsp sea salt
2 tsp olive oil
1 tsp apple cider vinegar

Sauce:
6 tomatoes, diced or 1 can of diced tomatoes
1 large carrot, diced
1 broccoli crown, diced
1 tsp garlic powder
1 tsp dried oregano
½ tsp sea salt

Place all the vegetables in a steamer and cook until they are soft.
Blend the vegetables with the seasoning in a good processor.
Add this to the pizza.

Mix the psyllium husk with lukewarm water to form a gel. Next, mix in olive oil, honey, and vinegar.
In a separate bowl, mix millet, sorghum, arrowroot, and sea salt well. Then, mix the wet and dry ingredients together.
Spread 2 tbsp of millet flour on the cooking surface and on your hands. Knead the dough until smooth. Then divide the dough into two balls. Flatten and shape each ball into a circle the size of a pizza. Brush lightly with olive oil.
Bake for 8-12 minutes

Additional Optional Toppings:
¾ cup shredded cheddar cheese and ½ parmesan (Goat is best if possible!)
Sliced black olives
Sprinkles of cooked ground beef

Summer Mango Smoothie

This mango smoothie has an amazing creamy texture and sweet, tangy tropical flavor. Made with 5 simple ingredients, it's an easy, delicious breakfast or healthy snack.

Ingredients
• 2 cups diced frozen mango, plus a few thawed cubes for garnish
• 1 small frozen banana
• 1 cup unsweetened almond milk, or any milk, plus more as needed
• ½ cup whole milk Greek yogurt*
• 1 tablespoon fresh lime juice
• Fresh mint or basil leaves, optional, for garnish

Instructions
1. In a high-speed blender, place the mango, banana, almond milk, yogurt, and lime juice.
2. Blend until smooth, adding more almond milk as needed to blend. Pour into glasses, garnish with diced mango and fresh mint, if using, and serve.

Hot Days of Summer... Deserve a cooling smoothie!

Summer Berry Smoothie

Raspberries, frozen banana, 2 pure fruit juices, and creamy almond milk make the healthiest tart-sweet smoothie ever.

Ingredients:
• 1 1/4 cup frozen raspberries
• 1 large ripe, sliced and frozen banana (1 banana yields ~1 cup)
• 1/2 cup pomegranate juice
• 3/4 cup orange juice
• 3/4 cup Plain Unsweetened Almond Breeze Almond Milk
Instructions
1. Add all ingredients to a blender and blend until smooth and creamy, scraping down the sides as needed.
2. Taste and adjust flavor as needed. Add more milk or fruit juice if the smoothie is too thick. You can add more frozen bananas if you want to make it sweeter.

Serve immediately.
Freezes well, or you could make popsicles with the leftover smoothie!
