As my Love calls it — today is Self-Care Sunday. 💛
Those who know me know that Sundays are my time to play in the kitchen at Overlook Haven on Sale Creek Mountain. Today’s creations included a vegetable tofu scramble, crispy hashbrowns, and a new-to-us recipe — lemon blueberry doughnuts topped with a bright lemon glaze and lemon-zest-infused coconut sugar. 🍋🫐
All whole food plant-based — no oils, no eggs, lighter on salt and sugar, and most importantly free of ultra-processing and unnecessary preservatives. Food that nourishes, comforts, and celebrates simple ingredients.
