Lila Volkas is a Certified Nutrition Consultant and workshop facilitator based in Berkeley, California. Lila brings joy and connection to employees around food and nutrition through her Corporate Team-Building Workshops. She makes nutrition and culinary information easy to understand and fun to learn through her food writing, illustration and one-on-one consulting. Lila has been hosting food events and classes for almost a decade with thousands of participants all around the world. She works with companies like Google, Microsoft, and Amazon to bring team-bonding and wellness into the workplace. These sessions are not your average mixology classes, Lila brings a unique Do It Yourself and “healthy-ish” spin to your favorite cocktails and treats. She engages and delights teams of 5 to 250+ people with delicious recipes, hands-on activities and practical food tips & tricks. Lila found her way to holistic nutrition after a six-year healing journey from chronic skin and digestive issues. She has come to recognize the onset of these health challenges as a blessing in disguise. They led Lila to her dream job of helping others find connection, joy and healing through food. She holds a bachelor's degree from the University of British Columbia and Holistic Nutrition Consultant certification from Bauman College where she graduated as the Valedictorian of her class. Lila believes in balance and enjoying the sweet things in life. She empowers her clients and workshop participants to make educated decisions about their health while also keeping it real.

Watermelon green tea spritz 🍉🍵🫧

I got a not so sweet yellow watermelon at the store and decided the best thing to do was to make juice and then this beverage happened and it was so good.

Step one:
Make watermelon juice! My favorite way is to put watermelon in the blender and then strain it through a mesh strainer (key for the best texture!)

Step two:
To your glass, add ice, 2/3 cup watermelon juice and 1/3 cup sparkling tea - I used mango green tea- I’ve been super into their variety of sparkling tea recently.

Stir and enjoy 💛

I love boba and I try to reduce the waste that comes with it when I can 🧋

I got a jasmine coconut latte + hojicha bc I wanted both and planned on saving some for later. handed my drinks to me in an almond milk carton cupholder and I thought it was so cute and resourceful.

I bring my own boba metal straw when I remember. (I try and keep a clean one in my car at all times to improve those chances.)

If I don’t finish? I save it for later.
👉Spoon out the ice, strain the pearls, jar everything separately and keep in the fridge. Next day — microwave the pearls for 15-30-seconds, add ice, pour it all back. Enjoy round two.

I geeked out on the gut-brain connection, talked about how blood sugar swings affect your focus and mood, and got into practical, affordable ways to actually eat for brain health.

The chat was ALIVE with hilarious memes, honest answers, and real engagement. This is the kind of crowd that makes facilitating so fun.

And yes, those are sardine earrings. I love my omega-3s on my plate AND as part of my outfit.

Tea-totaler’s Treat NA Cocktail 🫖🎉

This non-alcoholic cocktail embraces my lifelong love of tea parties and the nostalgic flavors that come with them.

Ever since I was little, tea parties have held a special place in my heart. My mom would carefully open the glass cabinet that held my great-grandmother Laura’s teacup collection, and I’d pick out the perfect cup and saucer that matched my outfit. Together, we’d make tea and treats and I’d invite a few select Beanie Babies and teddy bears to join the party.

As an adult, it can be really easy to lose play and whimsy and many use alcohol to disinhibit and have fun. My intention behind this non-alcoholic cocktail is to bring some magic, nostalgia and sweetness into your glass, sans booze.

The mix of ‘s orgeat and raspberry syrup conjures my two favorite cookies- jam thumbprint and french macroons.

I hope you enjoy this tea party in a glass and connect with your inner child while sipping this with your pinky up.

Ingredients:
2 oz Chilled Earl Grey Tea (I used )
1 oz NA Bourbon (I used )
½ oz Raspberry Gum Syrup
½ oz Orgeat Syrup
½ oz Oat Milk (I used )
¼ oz
¼ tsp Orange Zest
Pinch of Salt

Rim: Crushed shortbread cookie or raspberry thumbprint cookie.

Suggested glassware: rocks glass

Instructions:
-Boil water and steep 1 tea bag (or 1 tsp loose leaf) of Earl Grey in ½ cup water for 7 minutes. Chill completely.
-Prepare your glass: Crush a shortbread cookie on a cutting board. Brush a small area of your glass with orgeat syrup, then roll that spot in the crushed cookie to create a sweet and crunchy rim.
-In a shaker, combine the chilled tea, non-alcoholic bourbon, raspberry gum syrup, orgeat, oat milk, Pathfinder, orange zest, and salt with ice. Shake vigorously for 10 seconds.
-Double strain into your prepared glass over a large ice cube.
-Sip and enjoy!

Celebrate Purim with a NA Hamantaschen Spritz! 🎭 🎉

Hamantaschen Spritz:
Makes 1 serving

For rim:
1 Tbs. sugar
1 Tbs. poppy seeds

For mocktail:
Lemon for rim, peel, juice and garnish
1 oz. lemon juice
½ oz. apricot jam
3 dashes nonalcoholic orange bitters
1 oz. nonalcoholic orange aperitif
½ tsp. apple cider vinegar
Ice
½ cup sparkling water
Prepare rim:

In a high-speed blender, blend the poppy seeds and sugar for 30-60 seconds until well combined.

For mocktail:
Spread 1 Tbs. of the poppy seed and sugar mixture onto small plate. Moisten rim of glass by rubbing cut lemon along rim, then dip glass into poppy seed and sugar mixture to coat.

Use a peeler or sharp paring knife to cut a 2-inch piece of lemon peel. In a glass, add lemon peel, lemon juice and jam. Muddle ingredients together to mix. Pour in bitters, aperitif and apple cider vinegar. Add enough ice to fill the glass.

Gently add sparkling water. Stir with bar spoon to combine. Garnish with lemon slice.

I was inspired to follow this path by my own four-year healing journey from chronic skin, digestive and fatigue issues. I have come to recognize the onset of these health challenges as a blessing in disguise. They strengthened my ability to listen and attune to my body's needs and led me to my dream job of helping others find healing through food.
