Sometimes the best meals are the simplest ones. This lemon garlic chicken takes just minutes to prepare but delivers amazing flavor and nutrition. The marinade does all the work while you handle other things. Perfect for busy weeknights when you want something healthy and delicious! 🍋
Preparation:
• Skip this step if using chicken thighs. Split the chicken breasts by laying them down on a cutting board and running a knife along the long side, thereby opening up the breast into a “butterfly” or heart shape.
• In a small bowl, mix lemon juice with 2 Tbsp Olive Oil, garlic, and Salt & Pepper.
• Place chicken into the bowl with the marinade and allow to marinate for 10-20 minutes.
• Remove the chicken from the marinade and pat dry, then brush with the plain olive oil before placing on a grill pan, on a grill, or into a pre-heated pan.
• Allow chicken to cook on one side until it becomes white up around the edges and looks at least cooked halfway through, then flip and allow it to cook for an additional couple of minutes. Chicken is cooked when it is no longer pink in the center.
Variations:
• Use lime juice for varied flavor or when preparing this chicken for an Asian or Latin-flavored dish.
• Top with chopped fresh basil, rosemary, parsley, or cilantro.
