Today's lunch was a quinoa shrimp bowl ๐Ÿคค Made with mini cucumber, kalamata olives, banana peppers, pickled onions, and Greek vinaigrette.

This is a high-protein, nutrient-dense meal with 38g of protein from shrimp + quinoa, healthy fats from olives and vinaigrette, and fiber from the quinoa & cucumber.

Making a batch of quinoa and prepping any form of protein makes this an easy meal to prep for multiple meals.
