This bright and flavourful Mediterranean Chickpea Salad is perfect for warmer days and full of ingredients known to support heart health, brain function, and lasting energy. πŸ₯— It comes together in just minutes and is as refreshing as it is nourishing.

Ingredients
πŸ₯« 1 can (15 oz) chickpeas, drained and rinsed
πŸ₯’ 1 medium cucumber, diced
πŸ… 1 cup cherry tomatoes, halved
πŸ«’ 1/3 cup Kalamata olives, sliced
πŸ§… 1/4 cup red onion, finely diced
🌿 1/4 cup fresh parsley, chopped
πŸ‹ Juice of 1 lemon
πŸ«’ 2 tablespoons olive oil
πŸ§‚ Salt and pepper to taste
πŸ§€ 2 tablespoons crumbled feta cheese (optional)

Instructions
