My Dad.
Not sure where to start with this.
First off, it's a weird thought to not have any parents left. I still have my stepmom, and my family, of course, but my mom and dad are both now gone.
My dad was an interesting guy. Growing up, he was known for not laughing, or even smiling that much. He was a pretty serious guy, I guess. Stern. It's kind of hard to remember that guy cuz as he got older, as grandkids and great grandkids were born, after he retired, he seemed to lighten up quite a bit. It was noticeable that he laughed more, and smiled more. People commented. I mean, he had a sense of humor. Like not someone who was always funny, but he'd come out with things sometimes that were hilarious. And sometimes he actually laughed till he cried🀣
He loved babies. And babies loved him. So every time a new grandchild or great grandchild was born, he was right there. He was so proud of everyone. Family has always been really important, so when he could, he was always at the things- the games, the performances.
Everyone knew what not to do around him. You don't sing or whisper at the table. No elbows on the table. You're not on your phone at the table- best not to have it visible, actually.
But he loved completely. And he was very generous. Christmas at Grandma and Grandpa's was pretty special. They (my dad said it was all my stepmom, and he's probably right) made it magical and fun. The stockings were epic.
Growing up I never wanted for anything. Like literally. Every year before school started, we went school clothes shopping and I'd get a literal new wardrobe- every year. I wanted a '66 Mustang and for my high school graduation, I got a red '66 Mustang.

So do we know about this delicious snack? It popped into my head while I was driving today, and I'm like, "I can't be the first to think of this" (we are rarely the first person to think of ANYTHING, even if you're the first to take action or tell someone about it... Avocado egg toast with veggies. 400 calories and 40g of protein. There's a reason cottage cheese is everywhere. It added about 19g of protein to this breakfast, plus creaminess/cheesiness to the eggs. And honestly, this will keep me full for awhile. I'm a volume eater... I like my food! πŸ˜› So I'm learning all the tricks to add food without adding a lot of extra calories.

Cinnamon Roll Mug Cake- but make it healthy and high protein. I had a couple hundred calories left and still needed a bit more protein for the day, so thought I'd try this. Can't say I'm disappointed πŸ˜‹
I roughly followed this recipe, but tweaked it a bit and it still worked just fine. And LπŸ‘€K! There's like cinnamon-y stuff at the bottom of bowl under the cake! I even added an "icing" that was really good too.

My tweaks: I used egg whites instead of a whole egg, sugar free syrup, truvia brown sugar blend. My icing was plain nf Greek yogurt with vanilla creme stevia drops, thinned with a little fairlife ff milk. Microwaved for 90 sec, which was perfect. And I didn't measure anything but the flour and baking powder πŸ€·πŸΌβ€β™€οΈ
I couldn't get the swirl to happen so I made sunbursts. β˜€οΈThe final pic was the inspo pic.

Random made up fake deviled eggs in a bowl. Gotta say. Pretty damn good.
About 325ish cal and about 33g protein.

What I put in my bowl:
-2 hard-boiled eggs (do you know how cheap the already hard-boiled eggs are?!?)
-cottage cheese
-Bacon bits
-dill pickle mustard
-chopped onions
-EBB Seasoning
-crunchy chili and onion seasoning

Gave it a little mix after the pic. πŸ˜‹ There's a little bit of sweet, spicy, crunchy, and of course the dill. Yum.

My new favorite! This is on weekly rotation in our house now πŸ˜‹ Under 450cal and nearly 40g of protein!

This is why we donate blood regularly. We go, as a family, every 3 months. We used to go every 8 weeks, but Angeliese and I had trouble with our iron at that frequency. Turns out 4x per year is still considered a "frequent donor" for women. I love that they send an email and text to let you know when your donation is being utilized πŸ’—

The Red Car Trolley at Buena Vista Street is closing permanently Feb. 8, 2025. I don't think we've ever ridden it... maybe once. So we had to make it happen this trip. πŸš‹ Super cute and really adds to the charm of Buena Vista St. But they are making room for a new attraction in Avengers Campus called Stark Flight Lab πŸŽ‰
