Registered Dietitian Theresa Coleman is sharing one of her favorite easy, high-fiber breakfasts! These pumpkin pie overnight oats are a delicious way to start your day with vitamin A and lasting energy.

Ingredients you'll need:
1/2 cup rolled oats
1/4 cup preferred milk
1/4 cup canned pumpkin puree
1/2 Greek yogurt
1/2 tsp pumpkin pie seasoning
1 tsp maple syrup

Optional additions: hemp seeds, chia seeds, flax seeds, or nuts. Prep it in minutes, and wake up to a healthy, satisfying meal!
