10-12 pitted dates (this is about 80 grams — if you have a kitchen scale, use it)
2 teaspoons vanilla
1/4 cup creamy cashew butter
3 tablespoons unsweetened applesauce*
1/4 cup coconut oil, melted
1 egg
1/4 cup coconut flour
1/3 cup cocoa powder
1/2 teaspoon baking powder
1/3 cup dark chocolate chips -
*can substitute pumpkin puree

1) Preheat the oven to 350 degrees F. Place a sheet of parchment paper in an 8 x 8-inch baking pan (for thicker brownies, use a 9 x 9-inch loaf pan). 2) In a food processor, blend the dates until a paste forms; add vanilla, cashew butter, applesauce, and coconut oil; blend until smooth. 3) Add egg and beat until just combined. Add remaining ingredients and pulse a couple times until smooth. 4) Pour batter into prepared pan and sprinkle with chocolate chips. Bake 10-12 minutes, or until just set.
