Try this delicious lemon-ginger cooler made with ginger, lemon, date syrup, with optional add-ins like cinnamon and mint. The recipe is from the How Not to Die Cookbook:

Ingredients:
1 2-inch piece fresh ginger sliced
2 tablespoons blended peeled lemon
1 4-inch piece cinnamon stick (optional)
Date Syrup to taste (recipe on NutritionFacts.org)
mint, for serving (optional)
Instructions:
1. Combine 4 cups of water with the ginger in a large saucepan and bring to a boil.
2. Remove from the heat. Add the lemon and cinnamon stick (if using) and set aside for 30 minutes
3. Sweeten to taste with Date Syrup (if using). Refrigerate until chilled. Serve in a tall glass over ice. Add mint if you're in the mood.

Oh this Oklahoma weather has me so confused!! Yesterday was beautiful but today it’s like cuddle up under a blanket and have one of these!!!

WHITE HOT CHOCOLATE WITH WHIPPED ‘CREAM’
2 cups light coconut mylk
1/4 cup cacao butter, melted
2 tsp organic ground cinnamon
2 tsp vanilla extract
1 tbsp agave/maple syrup
1/2 cup aquafaba (water from a tin of chickpeas)
1/2 tsp cream of tartar
1 tsp vanilla extract
2 tsp sugar
Add coconut mylk, cacao butter, cinnamon, vanilla extract and agave to a small pan and heat gently. While the hot chocolate is simmering, add aquafaba to a clean mixing bowl and whisk for at least 5-6 minutes until it starts to form stiff peaks. Add in cream of tartar, vanilla extract and sugar slowly while whisking. Keep beating for a further five minutes, the mix should be thick and stiff. Scoop into a piping bag and swirl on top of your white hot chocolate. Sprinkle with a dusting of cinnamon to serve.

Do you believe in super foods?! ❤️Superfoods are foods that are thought to be nutritionally dense and good for one's health.

Blueberries, salmon, kale and acai are just a few examples of foods that have the "superfood" label.

✔️✔️There are no set criteria for determining what is and what is not a superfood. Superfoods don't have their own food group, it is more of a marketing term for foods that have health benefits.

Superfoods contain a variety of nutrients, such as:

➡️Antioxidants to ward off cancer
➡️Healthy fats to prevent heart disease
➡️Fiber, to prevent diabetes and digestive problems
➡️Phytochemicals which have numerous health benefits.

🙂Consuming foods that are packed with nutrients (as many superfoods are) is certainly a good idea.‼️But the key to a healthy diet is to consume a variety of nutritious foods in the right quantities.

Happy Friday!! Here’s a delicious treat for you to try with the kids this weekend!!

Cashew butter blender brownieees 💃🍫❤️ They're rich and fudgy and moist and everything a brownie should be, but also packed healthy yums like dates, applesauce, and cashew butter 👏🏻by .haven -
10-12 pitted dates (this is about 80 grams — if you have a kitchen scale, use it)
2 teaspoons vanilla
1/4 cup creamy cashew butter
3 tablespoons unsweetened applesauce*
1/4 cup coconut oil, melted
1 egg
1/4 cup coconut flour
1/3 cup cocoa powder
1/2 teaspoon baking powder
1/3 cup dark chocolate chips -
*can substitute pumpkin puree

1) Preheat the oven to 350 degrees F. Place a sheet of parchment paper in an 8 x 8-inch baking pan (for thicker brownies, use a 9 x 9-inch loaf pan). 2) In a food processor, blend the dates until a paste forms; add vanilla, cashew butter, applesauce, and coconut oil; blend until smooth. 3) Add egg and beat until just combined. Add remaining ingredients and pulse a couple times until smooth. 4) Pour batter into prepared pan and sprinkle with chocolate chips. Bake 10-12 minutes, or until just set.

Good Morning!! Happy Friday!!! Here’s a little something for you to try over the weekend!!!

Vegan chocolate coffee cake by .tok.vegan 🍫 Topped with a coffee 'buttercream' frosting! A recipe you want to try out!

Ingredients for the batter
1 c. (240 ml) non-dairy milk
1 tbsp apple cider vinegar
1/4 c. (50 ml) melted coconut oil
1,5 c. (210 g) + 3 tbsp flour
3/4 c. (165 g) brown sugar
2 tbsp cacao powder
2 tbsp coffee powder
1 tsp baking powder
pinch of salt

Ingredients for the frosting
1/2 c. (115 g) soft margarine
2/3 c. (85 g) powdered sugar
3 tbsp cold espresso
2 tsp cacao powder

Ingredients for the ganache
1/2 c. (125 ml) non-dairy cream
1/3 c. (60 g) dark chocolate

Method
Preheat your oven to 340F/170C.
In a bowl, combine wet ingredients and whisk until combined. Add rest of the ingredients and mix until well combined. Pour into a lined baking tin (20 cm) and bake for about 35-40 minutes. Let it cool completely.
For the frosting cream margarine on high then add in icing sugar, coffeeand cocoa powder.
For the ganache chop chocolate into small pieces. Pour nearly boiling cream onto the chocolate and stir until melted and smooth.
To assemble the cake, cut the sponge horizontally in half. Spread the frosting on the first half and add the second half on top. You can also cover the sides of the cake. Now add the ganache on top and sprinkle with chopped chocolate chunks.
