Low to No Carb Cooking

Let’s Taco About Some Good Soup
Ingredients
2 pounds ground lean beef, Chicken, Tofu, Or Veggie Variety of your choice(Choose preferred protein or veggies)
2 tbsp avocado oil
1/2 cup chopped white or yellow onion
One chopped green onion
1 tsp chili powder
¼ tsp red pepper flake or two shakes of hot sauce of choice
1 tsp dried oregano
½ tsp paprika
2 tbsp ground cumin
½ red bell pepper, diced
½ green bell pepper, diced
1 (14.5 oz) can diced tomatoes
1 can (4 oz) diced green chiles
4 cups bone or veggie broth of choice
¼ cup heavy cream
1 block of softened cream cheese
salt, black pepper to taste
1 avocado sliced
1 sliced or diced jalapeno (if desired)
1 bunch of chopped fresh cilantro
2 cups shredded cheese of choice

Instructions
1 In a large pan heat the avocado oil over medium heat.
2 Add the protein of choice or veggies breaking up the pieces with a wooden spoon, and cook until brown(if veggies about a minute and a half), about 10 minutes.
3 Transfer the beef in a crock pot.
4 Add the chopped onion, chili powder, red pepper flakes, dried oregano, paprika, ground cumin, bell peppers, diced tomatoes, diced green chiles and broth.
5 Mix to combine.
6 Cover with a lid and slow cook on low for 4 hours.
7 Heat cream cheese and heavy cream in sauce pan until melted and bubbling the remove crock pot lid and stir in the cream cheese/heavy cream mixture and add 3/4 of cilantro.
8 Cook for additional 20 minutes.
9 Season with salt & black pepper to taste and mix in 1 cup of shredded cheese.(Add any of the neither seasonings as week to preferred taste)
10 Divide the soup between bowls and serve topped with diced avocado(pictured sliced but diced is much better) shredded cheese of choice, dollop of sour cream, a green slice or diced jalapeños and sprinkle of green onion and fresh cilantro.

Serving Size:1 (Values below based on ground beef. total will vary based on protein choice or if veggies only. Please use your guide of choice to determine values based on your choices)�Carbohydrates:�5g�Fat:�27g (can add more avocado oil to crock pot to increase fat 1TBSP = 14g)�Protein:�25g

Seven steps to promote wellness changes in your life!
1st
If you want personal development and transformation it has to start with a plan!
Fail to plan- a plan to fail!
Choose goals that are a good fit for you, but a stretch!
Create a plan and employ strategies that can help you succeed.
It may not be the first goal you feel you should choose, but you're much more likely to succeed if you set priorities that are compelling to you, and feel attainable.

2nd
Ask yourself this question.
Why am I doing this, and whom am I doing it for?
The answer must be quantified, and it should be all about you if you want your changes to be sustainable.
Too often we make goals for others, or for reasons outside of ourselves, like skinny jeans for a high school reunion. Your goals should be all about you!

3rd
Select or create strategies for change that feel like they are achievable. Set yourself up for success!
Whether it’s eating healthier, stick to exercise, or ease stress, it’s best to concentrate on just one strategy at a time. Push yourself but be realistic, don’t do it all at once, when you feel comfortable with your progress in one area, you can then focus on the next area for change.

4th
Commit yourself.
Plans can’t be conceptions.
Make a written or verbal plan complete with selected strategies to yourself.
Make sure you include time progression goals so you can chart your progress. The ability to see how your progression will encourage through tough spots.
Be detailed about the change you've chosen and why it matters to you.
If it's a step toward a bigger goal, include that, too.
Example, I'm making a commitment to my health by planning to take a mindful walk, two days a week. This is my first step to a bigger goal: doing a stress-reducing activity every day (and it helps me meet another goal: getting a half-hour of exercise every day). I want to do this because I sleep better, my mood improves, and I'm more patient with family and friends when I ease the stress in my life.

5th
Be predictive of potential obstacles. Maybe you'd love to try meditating, but can't imagine having the time to do it. Or perhaps your hopes for eating healthier an extinguished the minute you're hungry at night and you feel like you want to eat the house. When our kitchen cabinets and refrigerators aren't stocked up with healthy foods we enjoy we crash and burn.
Brainstorm ways to leap over obstacles.
For example, I'll get up 20 minutes early for exercises and fit in a 10-minute walk before lunch.
Kitchen absent of healthy choices?
Think about five to 10 healthy foods you enjoy and will put them on my grocery list.

6th
Make sure to love on yourself!
Your strategies and progression plan should include achievement rewards. For example, if you hit your goal progression timeline reward yourself with something positive and impactful like a new pair of jeans, or a massage, get your nails did, whatever appropriate.
Do not reward yourself with food rewards, this approach can be counterproductive to promoting a healthy lifestyle change and becomes a bad cycle like,
“I have done so well this week, I’m going to reward myself and eat a cake!” We have all been there. No such thing as cheating- you way yo plan or you don’t; it a choice and it is planned. No exceptions.

7th
Have realistic expectations with the timeline of your goals and pivot when they are not promoting effective change.
Success is a long game- play it. When a strategy is not yielding results or your objective the analyze the situation and tweak your strategy in ways you think it might result in your intended outcome!

Now get to planning your personal transformation!
Love yourself and make it happen- you’re worth it!

Happy Friday from TEAM PMD!
It’s going to be hot, hot, weekend and week in the PNW, so a few reminders and some helpful info to support you through this heatwave!

*Don’t leave pets, children, elderly folks, or anyone more sensitive to heat in the car unattended, and without the AC on.

*Put ice cubes in pet water.

*Travel with both water and electrolyte waters or packets to add to your water jic.

*Don’t store flammables in or around your home.

*Hose down and drench all foliage and plants around your home and property that could become votive tinder. Remove existing dead or dried out foliage, debris, etc. from the same areas.

*Hydrate!!!! Very important to keep your body hydrated. Below are some tips to help you stay hydrated.

1. Drink the right amount for you!
What is that? Glad you asked…
Different body composition = different hydration needs.
An easy way to determine how much water you need is to divide your body weight in half and aim to drink that many ounces of water each day.
If you have cardiac issues be sure to ask your doctor how much water you should drink.

2. Water bottle to the rescue!
Always carry water with you and drink throughout the day and you are more likely to stay steadily hydrated. Find a favorite sustainably designed and BPA free water bottle that’s supports your hydration goal.

3. Set a cell alarm, Alexa or download a free water tracker app that prompts to drink water throughout your day. We have all three set up 😉!

4. Monitor caffeine and alcohol intake.
While caffeine and alcohol are fine in moderation, both substances can lead to dehydration. Make sure you are rehydrating after having your morning coffee or happy hour so your body stay haydrated and happy!

5. Add flavor.
Infusing natural flavors from fruits or mint can make drinking water easier for those who get bored with the flavor. We love to freeze berries to use as ice cubes or freeze lemon juice in ice ice trays for lemon juice ice!
