It's almost fall, and we are going to have a fantastic Fall Festival on Friday, Sept. 19! 🍂🍎

All are invited! There will be food, fun games, prizes, snow cones, cotton candy, popcorn, live music, and a a petting zoo! It's going to be a blast! Don't miss it!

Our Garden Club keeps our courtyard looking fabulous! 🌱

Whether it's fresh vegetables or gorgeous flowers, they work hard and always have something good growing in the garden. Everyone enjoys going out each night after dinner to w**d, water, and admire it. 💦 They love to watch the butterflies and insects pollinating and enjoy the sweet smell the fresh herbs growing. 🌿

They had a decent harvest with quite a few different vegetables, so we decided to create a lovely dish to enjoy. 🍅🍆 Our new Dietitian, Katherine, loves the garden and was happy to join right in! She took the time to provide important education and nutritional information about all of the wonderful vegetables.

Did you know that you can eat sweet potato 🍠 leaves? Well, we do know now! They're fantastic, and taste very similar to spinach. They're also very nutritious. She also taught us about the importance of a well balanced diet that includes plenty of healthy vegetables. We even learned how to save seeds.

Together we chopped up all the veggies. While our pasta cooked and our sweet potato leaves boiled, we roasted eggplant, garlic, bell peppers 🫑, sweet banana peppers, onion, squash , yard long green beans, and yellow and red tomatoes along with fresh basil and Boursin garlic cheese. What a beautiful tray of food we harvested! Our residents were so proud of themselves.

Once our veggies finished roasting, we burst the tomatoes and stirred them together with the soft roasted veggies and the creamy garlic Boursin cheese to create a sauce. Then we put everything together with the pasta and sweet potato leaves and mixed it all up with just a touch of pasta water and topped it off with a bit of parmesan cheese. Viola! It was amazing! 😋

Associates trickled in here and there as they smelled the goodness from down the hall and came to take a peek. Everyone wanted to try our dish and were so proud of our Garden Club. Thank you to our sweet Katherine for joining in the fun!

Looks like we will be harvesting some giant Cucuzza squash next. Wonder what dish we come up with to make with that? 🤔

Our Fun Committee was at it again! This time they prepared a wonderful breakfast fundraiser. 🎉

They came in early and worked hard to prepare and set up. There was everything from bacon 🥓, sausage, and eggs 🍳 to pancakes 🥞, fresh fruit 🍓, and juice. The atmosphere was wonderful as well, with light jazz music playing in the background and friends socializing. What a wonderful way to welcome the morning with your coworkers!

Our staff and residents had an absolute blast at Splitz of Orange Park in Orange Park! 🎳

We had a huge group of 36 all together. The staff at Splitz were wonderful. They are the most amazing group of kind people. They were so good to us. We all bowled a couple of fun glowing games. Then we ate an incredible lunch! 😋

Last but not least we hit the arcade! 👾 Everyone had so much fun. There was so much to see and do there. Afterward, staff helped residents cash out all of their tickets 🎟️ for prizes to take home as special souvenirs to remember this great day. This truly was one of our greatest trips to date. We have an amazing team here at LCCOP. What a fantastic day it was! Thank-you Splitz! We can't wait to go again!

This year due to renovations 🚧 we had to delay our volunteer luncheon. It may have been a little late, but it is still very important to us to thank our wonderful volunteers each year!

This year we had a 5-course "Tour of Italy" luncheon! 🇮🇹 Our appetizer was a very special home-grown Italian squash known as cucuzza (aka "gagootza" in Italy). The dish was made with Ditalini pasta, sweet Italian sausage, gagootza and fresh herbs. Next was Italian soup and salad. For the main course, we served spaghetti, lasagna, and Italian bread. 🍝 To end the meal, guests chose from an assortment of Italian sweet treats. Everyone enjoyed the meal and not one person in the room had ever tried the squash before. It is always fun to try new things.

We gave out many prizes throughout the luncheon, but the real prize is our priceless volunteers. 🤩 We would not be able to do as much as we do without all the help of our kind, generous, and dedicated volunteers. Some of them have been coming for 20 years or more.

We ended our National Skilled Nursing Care Week with a wonderful wedding!

Our lovely resident, Mrs. Fausto, renewed her wedding vows with her husband, right at the facility! Our associates went above and beyond to make the event special. The bridesmaids and groomsmen all looked amazing, and the flower girl was superb! Our lovely bride was gorgeous in her beautiful gown and veil. To keep with their Filipino tradition, Mr. Fausto wore his original Barong Tagalog. Some of our Filipino associates even dressed in traditional attire to mark the occasion.

We held a beautiful ceremony outside our courtyard under the pagoda. Our own volunteer chaplain, Mr. Reed, officiated the ceremony and said the most heartwarming and touching words.During the reception, the lovely couple danced to their original wedding song while they sang the words to each other so sweetly.Congratulations to the bride and groom!

We are all so glad we were able to be a part of such a precious moment.
