Just want to say thank you for ALL the beautiful Birthday messages that everyone has sent me. They have certainly been very uplifting after our vacation plans got canceled due to hurricane, and our day plans were canceled due to hurricane. Now we just hope our dinner reservations aren’t canceled due to this hurricane. Lol 😂
As long as my family is with me, and we are safe, my Birthday is beautiful and very blessed. ❤️❤️❤️

I just can’t express how proud we are of our 9yr old son Nathan who has already managed to score high 90’s and 100’s on all his 5th grade midterms this week. He absolutely loves algebra! At this rate, he might be starting 6th grade by the new year. ❤️ He is doing so well and we are so glad we are homeschooling with an Online Academy. Just so proud of our Nathan ❤️❤️❤️

GARLIC BUTTER CHICKEN BITES WITH LEMON ASPARAGUS
Ingredients
3 boneless, skinless chicken breasts, cut into bite-sized chunks
2 bunch of asparagus, rinsed and trimmed
1/2 cup butter, softened
1 teaspoon olive oil
2 teaspoons minced garlic
1 teaspoon Italian seasoning or Herbes de Provence
1 tablespoon hot sauce, optional
1/2 cup (125ml) low-sodium chicken broth
Juice of 1/2 lemon
1 tablespoon minced parsley
Crushed red chili pepper flakes, optional
Slices of lemon, for garnish
For the chicken seasoning:
1 teaspoon salt
1 teaspoon fresh cracked black pepper
2 teaspoons onion powder
DIRECTIONS

1. Start to slice chicken breasts into bite-sized chunks and season with salt, pepper, and onion powder. Let sit in a shallow plate while you prepare the asparagus.

2. Wash and trim the ends of the asparagus, then blanch them in boiling water for 2 minutes, then soak in ice water to stop the cooking asparagus. Drain and set aside.

3. Heat half butter and olive oil in a large cast-iron skillet over medium-low heat. Gently stir-fry the chicken bites on all sides until golden brown. Lower the temperature, add one teaspoon minced garlic and Italian seasoning and stir and cook with chicken bites until fragrant. Remove the chicken bites from the skillet and set aside to a plate.

4. In the same skillet over medium-high, add minced garlic then deglaze with chicken broth (or wine). Bring to a simmer and allow to reduce to half the volume. Add remaining butter, lemon juice, hot sauce, parsley. Give a quick stir to combine.

5. Add the blanched asparagus and toss for 2 minutes to cook it up. Add the sauteed chicken bites back to the pan and stir for another minute to reheat. Garnish the chicken and asparagus with more parsley, crushed chili pepper, and lemon slices and serve your garlic butter chicken bites and asparagus immediately. Enjoy!

This is what I made tonight and it was SO YUMMY!
CHEESE, MUSHROOM and SPINACH CAULIFLOWER CRUST CALZONE!
Healthy and delicious!😋

Makes 4 servings
Per serving
1 ½ ounces lean protein
3 vegetables
1 condiment
1 fat

INGREDIENTS
Cauliflower Crust
1 small head cauliflower, cut into small florets (should yield 3 cups of cauliflower rice)
1 egg, lightly beaten
½ cup / 1.7 oz / 50 gr shredded part-skim mozzarella cheese
½ teaspoon fine grain sea salt
¼ teaspoon ground black pepper
Filling
4 teaspoons olive oil
1 8 oz package sliced crimini (baby bella) mushrooms
1 garlic clove, minced
½ teaspoon dried oregano
3 cups baby spinach
¾ cup shredded mozzarella cheese

DIRECTIONS
Preheat oven to 450°F and place a rack in the middle. Line a baking sheet with parchment paper and grease it with olive oil. Set aside.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add mushrooms and sauté until mushrooms are brown, stirring every so often, about 5 minutes. Add garlic and oregano and cook for 1 further minute. Add spinach stirring just until wilted, about 1 minute. Transfer to medium bowl. Season with salt and pepper and set aside.
Transfer the cauliflower rice to a mixing bowl and add egg, mozzarella, oregano, sea salt and pepper. Mix well.
Using your hands, press the mixture onto the baking sheet and shape into four discs (diameter should be about 4 inches).
Place in the oven and bake for 10 minutes.
Remove from the oven and, working quickly, top with a bit of mozzarella cheese, then mushroom mixture, distributing evenly. Sprinkle some more mozzarella over mushrooms. Using a large spatula carefully lift the half of the disc without filling and fold it over the other part.
Use your fingers to push the edges of each calzone together and seal in the filling.
Bake in the oven for an additional 12 minutes.
