As we look forward to our 2nd potluck, here’s one of the fan favorite recipes from last time!

Lemon Dill Green Bean Salad

Ingredients
• 1 lb fresh green beans, cut into 1-2 inch pieces
• ¼ cup olive oil
• zest of 1 lemon
• juice of 1 lemon
• 1 tablespoon fresh dill, finely chopped (or 1 teaspoon freeze-dried dill)
• ¼ to ½ cup red onion, finely diced
• ½ teaspoon garlic powder
• ½ teaspoon salt (or to taste)
• ¼ teaspoon freshly ground black pepper

Instructions
1. Blanch the green beans
Bring a large pot of salted water to a boil. Add green beans and cook for 1 minute until bright green and just tender-crisp.
2. Ice bath
Immediately transfer the beans to a bowl of ice water to stop the cooking. Let sit 3–5 minutes, then drain and pat dry.
3. Make the dressing
In a large bowl, whisk together olive oil, lemon zest, lemon juice, dill, red onion, garlic powder, salt, and pepper.
4. Toss and rest
Add the cooled green beans to the bowl and toss well to coat. Let sit for 10–15 minutes to allow flavors to meld.
5. Finish and serve
Adjust salt and lemon to taste. Serve chilled, at room temperature or even as a hot side dish.
