So I found these low carb crunchy taco shells at Walmart the other day and I was so excited to try them!!
Very slowly I have been adding in all the foods (in moderation of course) and boy have I missed crunchy tacos!!
I guess you can say that now I am in maintenance mode with my health journey, and I have made a few swaps to keep this low calorie....
Ground Turkey
Low fat sour cream
Rotel
Taco shells (only 150 calories)
Taco Bell Diablo
And some crispy cold lettuce for crunch and to help with the spice AND because it didn't fit in the shell
This whole meal came in at around 450 Calories but the shells were packed with protein from the taco meat.
I was STUFFED, and already excited to make them again! I'm thinking next time some rice and beans on the side...
⭐On a side note: I often get asked if I still think "Keto". I do, but I have to break through and not eat all the high fat foods. Don't get me wrong, I still eat the cheese, cook with oil, and add butter when needed, but I have cut back and i have substituted a lot of the fats with more protein. I do still consume those healthy fats as part of my diet, they just are not the main focus like they were while I was on keto.⭐
