❤️ WHAT YOU SEE VS. WHAT I SEE....❤️

YOU: A plate of tacos
ME: A thing of beauty

YOU: High fat lots of calories
ME: Low Calories Low fat high protein

YOU: Weight Gain
ME: fat loss and weight management

👏👏👏👏

So I found these low carb crunchy taco shells at Walmart the other day and I was so excited to try them!!

Very slowly I have been adding in all the foods (in moderation of course) and boy have I missed crunchy tacos!!

I guess you can say that now I am in maintenance mode with my health journey, and I have made a few swaps to keep this low calorie....

Ground Turkey
Low fat sour cream
Rotel
Taco shells (only 150 calories)
Taco Bell Diablo
And some crispy cold lettuce for crunch and to help with the spice AND because it didn't fit in the shell

This whole meal came in at around 450 Calories but the shells were packed with protein from the taco meat.

I was STUFFED, and already excited to make them again! I'm thinking next time some rice and beans on the side...

⭐On a side note: I often get asked if I still think "Keto". I do, but I have to break through and not eat all the high fat foods. Don't get me wrong, I still eat the cheese, cook with oil, and add butter when needed, but I have cut back and i have substituted a lot of the fats with more protein. I do still consume those healthy fats as part of my diet, they just are not the main focus like they were while I was on keto.⭐

🚨 TACO SALAD ALERT 🥗

🌮 So taco salad is a staple in the house. I've eaten it all through my keto journey and have continued to eat it since transitioning off of keto.

When you're in a ketogenic lifestyle, you are eating a high fat, low carb and moderation of protein. That is how it works. When your body intakes few carbs it doesn't have enough to burn for energy so it burns fat instead.... 🔥

Soooo....once you go off of keto and start eating everything in proportion, some swaps are necessary!

So here is my taco salad recipe from last night:

🥬 Measured with my heart
🥒 & 🫑 Measured with my heart
🦃 Ground Turkey
🫘 Pinto beans
🧂 Salt, pepper, chili powder, garlic powder, onion powder, cumin, paprika
🧅 Chopped onions
🍅 1 can of Rotel
🧀 2 tablespoon of shredded cheese
🍦 1 tablespoon of LIGHT Sour cream

Please note...I forgot tomatoes and avocado (probably the most important ingredients ) 😏

❤️ Overall it was a beautiful (and delicious) salad...oh did I mention that Walmart now sells DIABLO HOT SAUCE in a bottle? You're welcome!

❤️ WELCOME BACK POTATOES ❤️

So after many many months of SLOWLY reintroducing foods back into my diet, I decided it was time....

(Enter potato) 🥔

So here is what I did:

💪 I bought a bag of baby potatoes
💪 Read the serving size
💪 And made it.....

That's it!

That way, there was no over indulging and I still get to enjoy the deliciousness of the potatoes with all the healthy goodness they provide my body! 😁

One thing I am trying VERY hard to do, is keep my diet "sugar free" 🍬🍭

🫣It really is almost impossible to eat things with no added sugars, but I do keep it below 5g of added sugar.

The ketchup I put on the potatoes is Heinz See Sugar Ketchup. A little goes a long way. It's very tasty, and for all of you ketchup lovers, you don't feel like you're missing out on your favourite condiment!

For the scramble:

🥚 3 eggs
🧅 A little bit of diced onions
🍄 A few chopped mushrooms
🥒 Some zucchini

This meal kept me full for HOURS! And it was very delicious 🤤

❤️THE DRESS FITS❤️

So I've worn this dress one time since I got it last summer.

When I got it from my local buy nothing page it was right and the zipper didn't zip!

This past Easter it finally fit and I LOVED it!
(I was still keto then)

Fast forward several months, and not being on keto, Jeff and I went on a date tonight with my gorgeous babies... (seriously thought aren't they gorgeous? )🐶❤️ And I put in the dress...

AND....

Fits like a glove!

I have been navigating the world reintroducing foods back into my diet slowly, and portion control...

Has it been easy? NO
Has it been fun? Sometimes

But it's been a challenge that I have taken head on and I'm so proud to be able to write this post, eating all of the foods I have always loved, with a healthy relationship with food, still fitting into my dress!

🐦 GOOD MORNING 🐦

Ok ok...I know it's been FOREVER since I have made a post and I'm missing you guys ❤️❤️❤️

✨So here's the truth.

💜I feel have felt my creative mojo leave my body. Like I literally don't know what to post about!

😳Of course I'm still eating food everyday (keto/low carb) but when I take a video, or a photo of my food, it's literal crickets 🦗 when I go to create a post about it!

However with that being said, I decided to post this pic.

💋A look back at how far I've come. It makes me tear up on how much grit and dedication and discipline it took to get here.

I wouldn't have done this journey any other way!🌺

🌞I have been vocal in the past about wanting to be 140lbs on the scale and instead I sit here at 162lbs.

I'm not gaining and I'm not losing....

So here is what I decided to do about it...

🚨NOTHING AT ALL!🚨

👉I am going to stop putting pressure on myself to lost that last 20ish pounds I have been striving for...

👉I am going to enjoy my food and keep eating healthy

👉And I'm going to keep drinking my water and going on my walks!

🌟I am VERY happy and PROUD of my body and my mindset.

It's taken a lot to get here, but I think here is the place I was getting acquainted with me again!

Will I still be posting?

✅YEAH I WILL!

But I want to make inspired posts 💜
