Comfort food that actually supports your health. 💛
This Immune-Boosting Chicken & Veggie Soup delivers anti-inflammatory, gut-healing, immune-supportive goodness in every spoonful. 🍲

Ingredients:
1 Tbsp olive oil or avocado oil
1 medium yellow onion, diced
3 cloves garlic, minced
1 Tbsp fresh grated ginger (or 1 tsp ground ginger)
3 medium carrots, peeled and sliced
2 celery stalks, chopped
1 red bell pepper, chopped
6 cups low-sodium chicken bone broth (or regular chicken broth)
2 cups cooked shredded chicken (rotisserie or poached)
2 cups chopped leafy greens (spinach, kale, or Swiss chard)
1 tsp turmeric
½ tsp black pepper
1 tsp sea salt (adjust to taste)
Juice of ½ lemon (adds vitamin C + bright flavor)
Optional: fresh parsley or cilantro for garnish

Directions:
In a large pot, heat oil over medium heat. Add onion, garlic, and ginger. Sauté 3–4 minutes until fragrant.
Add carrots, celery, and bell pepper. Cook another 5 minutes to soften slightly.
Stir in turmeric, salt, and pepper. Pour in the bone broth and bring to a gentle boil.
Reduce heat and simmer 15–20 minutes, until veggies are tender.
Add shredded chicken and greens. Simmer 5 more minutes until warmed through and greens are wilted.
Finish with lemon juice and fresh herbs before serving.
