โจ Creamy Roasted Butternut Squash Soup (Paleo-Friendly)
Ingredients:
1 large butternut squash (peeled, seeded, cubed)
2 Tbsp olive oil or avocado oil
1 medium onion, chopped
3 garlic cloves, minced
3 cups chicken or vegetable broth (no added sugar)
1 can (13.5 oz) full-fat coconut milk
1 tsp ground cinnamon
ยฝ tsp ground nutmeg
Sea salt + black pepper, to taste
Optional garnish: fresh thyme, pumpkin seeds, or a swirl of coconut cream
Instructions:
Preheat oven to 400ยฐF. Place squash cubes on a baking sheet, drizzle with 1 Tbsp oil, season with salt + pepper, and roast for 25โ30 minutes until tender.
In a large pot, heat remaining oil over medium heat. Sautรฉ onion until soft, then add garlic and cook 1 minute.
Add roasted squash, broth, coconut milk, cinnamon, and nutmeg. Bring to a simmer for 10 minutes.
Use an immersion blender (or carefully transfer to a blender) to puree until smooth and creamy.
Adjust seasoning, garnish, and serve warm with cozy fall vibes. ๐
