Recipe: 🍒 No-Sugar Tart Cherry Glaze for Chicken
Ingredients
1 cup tart cherry juice (unsweetened)
2 tablespoons balsamic vinegar
1 tablespoon soy sauce or coconut aminos
1 teaspoon Dijon mustard
1–2 cloves garlic, minced
½ teaspoon dried thyme or rosemary (or 1 tsp fresh)
Freshly cracked black pepper
Optional: 1–2 tablespoons finely minced shallot for natural sweetness
Optional: 1 tablespoon butter or olive oil to finish
Instructions
Combine ingredients
Add everything except butter/oil to a small saucepan:
tart cherry juice
balsamic
soy sauce
mustard
garlic
herbs
shallot (if using)
Simmer
Bring to a boil, then reduce heat and simmer 15–20 minutes, stirring occasionally, until it reduces by roughly half and thickens.
The natural sugars in the tart cherry juice and shallots concentrate as they reduce, creating a balanced glaze without added sugar.
Finish
Remove from heat and whisk in 1 tablespoon butter for richness (optional) or a splash of olive oil if you want it dairy-free.
Use as a glaze
Brush onto chicken in the last 5 minutes of cooking, or spoon over just before serving.
