The perfect breakfast, snack or afternoon protein bite!
Our Protein Lemon Blueberry is packed with healthy protein with egg whites, cottage cheese and simply sweetened with your favorite sweetener and juice blueberries. 💙
Ingredients:
1 cup egg whites
1 cup water
1 cup blended cottage cheese
1/2 cup blueberries
1/2 cup monkfruit sweetener
Juice of 1 lemon
Directions:
Mash blueberries and set aside. Mix egg whites with water until peaks form. Fold in blueberries, cottage cheese, lemon juice and sweetener.
Pour into a loaf pan and top with more mashed blueberries. Bake at 350 degrees for 30-35 minutes. Enjoy!
