- 1/4 cup Stevia powder (or adjust to taste)
- 1/2 cup raisins
- 4 large eggs
- 1/2 cup olive oil
- 1/4 cup coconut oil
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- Pinch of salt

*Instructions:*

1. Preheat oven to 350°F (180°C). Grease two 9-inch (23cm) round cake pans.

Unstuffed Cabbage Soup with Rice

Servings: 6-8

Ingredients:

- 1 medium cabbage, chopped
- 2 sweet peppers, diced
- 2 stalks celery, diced
- 1 (14.5 oz) can tomato with chilies
- 2 tsp onion flakes
- 2 tsp minced garlic
- 4 cups chicken or vegetable broth
- 1 cup uncooked white or brown rice
- Salt and pepper, to taste
- Optional: ground beef or sausage for added protein

Instructions:

1. In a large pot, sauté the chopped cabbage, diced sweet peppers, and celery in a little bit of oil until tender.
2. Add the canned tomato with chilies, onion flakes, and minced garlic. Cook for 2-3 minutes.
3. Pour in the broth and bring to a boil.
4. Add the rice and reduce heat to low. Cover and simmer for 20-25 minutes or until rice is tender and cabbage is cooked through.
5. Season with salt and pepper to taste.
6. Serve hot, garnished with chopped fresh herbs (optional).

14 years ago since I moved to Palm Springs!! This picture was taken about 700 yd from where I sit when I lived at 277 East Stevens Road apartment 3. September 30th marked my 14-year anniversary when I arrived in California after driving all the way from Richland Missouri in a giant Penske truck by myself.

I remember distinctly how the sunscreen was burning my eyes all the way here and the sun blaring down in my face except for when I got to Albuquerque and it was pouring down rain and someone pulled right out in front of me and I barely missed them. It was a miracle that it wasn't a disaster bumper to bumper traffic around 5:00 p.m. and pouring down rain in Albuquerque New Mexico.

I made it without event. But I did almost knock off the balcony awning at the motel 8 in Palm desert that night. I awoke on October 1st to double rainbows. I stayed in a hotel a couple of nights on the way here. My church in Missouri rented my Penske truck, I paid the car insurance on it, my sister's paid for the gas in the hotels. And we made it happen thanks to the good Lord!!
