Recipes from Liz's kitchen
Spicy Chicken Soup
1tsp olive oil
1 cup chopped green pepper
1/2 cup chopped green onion
1 tbl minced bottled garlic
1 tsp ground cumin
2 cups of chopped skinless boneless Rotisserie (organic) chicken
1 tbl minced canned chipotle chilies in adobo sauce
(spicy, you can add less)
3 cans of chicken broth (I get organic)
14 1/2 oz canned diced tomatoes and green chilies
11 oz can whole kennel corn with sweet peppers drained.
Heat oil in large sauce pan over medium high heat. Add bell pepper, onions, garlic and cumin. Salute 4 min or so. Stir in chicken, chipotle, broth, tomatoes and corn. Bring to a boil, reduce heat and simmer for 10 min.
Scrambled Egg Muffins
12 eggs
1/2 onion
1/2 or so of veggies (bell pepper, mushrooms)
1/2 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1/2 cup of mozzarella cheese
Oven 350, lightly crease muffins tins. Scramble eggs and add in veggies 1/3 full. I add in turkey. Cook for 20 - 25 min. Don't forget the avocado!
Turkey Chili with Chipotle and Kale
1/4 cup olive oil
1 1/4 lb ground turkey (93% lean)
1 onion chopped
2 cloves of garlic chopped (I use garlic in a jar)
2 bell peppers, 1 red, 1 green chopped
1 can chipotle peppers in adobo sauce chopped using 1 Tbsp cause (very spicy so you can use less if needed)
1/2 tsp ground coriander
1/2 tsp ground cumin
1 28oz can crushed fire-roasted tomatoes
2 14.5 oz cans pinto beans rinsed and drained
1 1/2 cups low-sodium chicken broth
4 cups of chopped curly kale stems removed.
Heat 2 tbsp oil in a large saucepan over medium high heat, season turkey with 1/4 tsp each salt and pepper. Cook until browned, 8 to 10 min. Set aside.
Heat remaining 2 Tbsp oil in same pan over medium heat. Cook onion and garlic until onion is tender about 5 min. Add bell pepper, cook until soft about 5 min. Add chipotle, adobo sauce, coriander, and cumin, cook about 1 min.
Stir in tomatoes, beans stock and turkey, bring to a boil. Reduce heat to low. Simmer until flavors meld about 30 min.
Stir in kale, letting it wilt. Season with pepper to taste.
