Quick meal! Sauté ground chicken, add a can of beans. Mix 505 green chilies and garlic and cumin, put on leftover rice or you can easily make jasmine rice in 20 minutes. Topped either a cabbage, avocado and tomato salad with lime juice. I used a small amount of reduced fat Mexican cheese and sour cream.

My second time making Lasagna Soup. This time used hot chicken Italian sausage with peppers and zucchini and chopped greens for the veggies. Last time I added cannellini beans. There’s not a lot of noodles so this would be a lighter alternative to lasagna and bread. I would pair it either a salad but it was super filling and enough just on its own.
