🥗 Ingredients (Serves 3–4)
-2 cups of grilled/shredded chicken breast
-1 cup cooked quinoa (or cauliflower rice for lower carb)
-1 cup black beans (rinsed & drained)
-1 cup cherry tomatoes, halved
-1 avocado, sliced
-½ cup corn (fresh or frozen)
-¼ cup red onion, finely chopped
-Fresh cilantro (for topping)
✨ Cilantro Lime Dressing
-¼ cup plain Greek yogurt
-Juice of 1–2 limes
-1 tbsp olive oil
-1 garlic clove
-Handful of cilantro
-Salt + pepper to taste
Add the above dressing ingredients to blender and blend until smooth.
👩🍳 Instructions
1. Cook quinoa according to package directions
2. Season chicken with chili powder, cumin, garlic powder, salt, and pepper
3. Assemble bowls with quinoa, chicken, beans, veggies, and avocado
4. Drizzle with cilantro lime dressing
5. Top with fresh cilantro + extra lime squeeze
