Don’t forget about this month’s Wellness Challenge! A great way to celebrate Mother’s Day is to go to work with your Mom the next day! This morning we were on-site at DSS for a group session doing InBody Body Composition scans, trying different wellness tools, installing Stelo blood glucose monitors, and talking medications with my Mom, Carilion Pharmacist Amy Westmoreland!

This Ground Turkey Sweet Potato Bake is not only delicious but also packed with nutrients! Get ready for a flavor explosion! 🌟🥘

- Ground Turkey Sweet Potato Bake

- Ingredients:
- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup chicken broth
- 1 cup shredded cheese (optional)
- Fresh parsley for garnish

Directions:
1. Preheat your oven to 400°F (200°C).
2. In a large skillet over medium heat, add the ground turkey and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
3. Add the chopped onion, garlic, and bell pepper to the skillet, cooking until softened, about 3-4 minutes.
4. Stir in the diced sweet potatoes, paprika, cumin, salt, and pepper. Mix well.
5. Pour in the chicken broth and bring to a simmer. Cover and cook for about 10 minutes, or until the sweet potatoes are tender.
6. Transfer the mixture to a baking dish and sprinkle cheese on top if using.
7. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
8. Garnish with fresh parsley before serving.

Prep Time: 15 minutes | Cooking Time: 30 minutes | Total Time: 45 minutes

Check out this Spinach, Feta, and Rice Casserole recipe from Eating Well! This one pan dinner is delicious and also vegetarian. It can be served as the meal or is versatile enough to be paired with any protein!

This one-pan recipe is the casserole version of spanakopita! It's hearty enough to enjoy as a vegetarian lunch or dinner, yet versatile enough to serve alongside just about any protein. To make it extra creamy, top each serving with a dollop of sour cream.

As we round out National Preceptor Month, we wanted to take a moment and shout out all the interns that have come to work with Cook Nutrition and the Giles County Worksite Wellness Program. The next generation of Registered Dietitians is looking very bright! Each and every one of these ladies has contributed to the betterment of the worksite wellness program and to furthering their education on their journey in dietetics. We're excited to see the wonderful things they will do and are proud to have played a small yet meaningful part in their journey!
