Lemon Blueberry Muffins ππ
Light, soft, and full of springtime flavour. Blueberries are rich in antioxidants that support brain health, and the familiar process of measuring, mixing, and baking makes this a calming and meaningful activity for memory care residents. β¨
Ingredients
π 1 1/2 cups all-purpose flour
π 3/4 cup sugar
π 1/2 tsp salt
π 2 tsp baking powder
π 1 cup fresh or frozen blueberries
π 1 egg
π 1/3 cup melted butter or neutral oil
π 1/3 cup milk
π 1 tsp vanilla extract
π Zest of 1 lemon
Instructions

Preheat oven to 375Β°F (190Β°C) and line a muffin tin

Whisk together flour, sugar, salt, and baking powder

In a separate bowl, mix egg, butter, milk, vanilla, and lemon zest
β
Gently combine wet and dry ingredients until just mixed

Fold in blueberries carefully

Fill muffin cups about two-thirds full

Bake for 20 to 22 minutes until golden and a toothpick comes out clean
