Not sure what to call this meal, other than delicious! I used fresh organic kale and Swiss chard from my garden, whole grain rice vermicelli noodles, garbanzo beans, baba ghanoush, and garlic. I deglazed the pan with lemon white wine. I added some seasonings, and YUM!! My dinner took about 10 minutes to cook. So easy and delicious. This was a vegan meal, however, if you desire animal protein, chicken would probably be good. 😁
