I find it easier for my busy week to cook a large dinner on Sunday and have leftovers. This week is Buddha Bowls.
This is perfect for blended families:
Vegan, vegetarian or carnivore no problem 😁

Quinoa, roasted vegetables, sauté kale, garlic and smashed avocado. I used Trader Joe’s chili sauce. Optional cheese or meat if you choose.
