Are you SICK of eating the same leftovers for days? Are you WASTING leftovers because they don't sound good the next day? Here is your way to fix those problems!

Tune into my new series: NO MORE BORING LEFTOVERS! I will show you how to make quick & easy "NEW" meals from leftovers that satisfy your cravings, taste AMAZING, and are HEALTHY all while having ZERO waste!

DAY 1:
Original Dinner Meal: chicken, rice, and mixed vegetables.

"NEW" Lunch Meal (I used the chicken from the original dinner): basil pesto chicken sandwich on sourdough bread with caramelized onions, avocado, tomato, and balsamic glaze! THE PICTURE SPEAKS FOR ITSELF- CHEF'S KISS! 😘 My eyes were rolling in the back of my head after every bite.

This took ONLY 10 minutes to make. I made the basil pesto in a blender, cooked caramelized onions on the stove, and built the sandwich! If I can do it, you can do it too! Trust me, life is better juic-y & FULL of flavor! Remember you deserve to eat like the queen you are! 👑

ARE YOU BUYING HERBS FOR ONE RECIPE & DON'T KNOW WHAT TO DO WITH THE REST?😭 Honey, stay tuned for these easy blender recipes to give your herbs another life before ending up in the trash!

First up, BASIL PESTO! Pesto isn't just for pasta- it is so versatile and can be used as a marinade, sauce, dressing, pizza base & more!

Recipe:
2 cups of fresh basil (use stems and leaves)
2/3 cup olive oil
1/2 parmesan cheese (grated or shredded)
1/4 cup walnuts OR pine nuts
2 garlic cloves
4-5 turns of salt and pepper
Pinch of red pepper flakes (optional)
*Makes about 1 cup*

Instructions:
1. Put 1/3 cup of olive oil in a blender with the rest of the ingredients.
2. Put the blender on low to medium speed and slowly add in the rest of the olive oil until blended smoothly. Should take about 3-4 minutes.
3. Taste & put on your favorite protein, pizza, caprese salad, grilled veggies, etc.!

If you won't use all at once, place in freezer to use for future yumminess! What are you waiting for? Get blending!

Try adding carrot juice to your routine! It sure brightens mine and adds some pep in my step! 🤸🏻‍♂️

CARROT JUICE RECIPE:
4 lbs organic carrots
4 medium organic apples (I use pink lady)
2 Cara Cara oranges (just the juice)
1 large chunk of ginger (add less if you don’t like ginger)
*Makes 32 ounces of juice!*

Super easy & super delish! When the universe gives you carrots, make juice!

This Italian beef vegetable soup is one of my favorites! It is packed with EXTRA veggies to get in your daily nutrients. Here are the vegetables for this recipe:

You’ll love these Veggie Sesame Noodles because they pack tons of veggies in one meal! You can add a variety of veggies for taste & color to pack your meal with a nutrient punch! There are no right or wrong veggies to add just what sounds good to you!

CAFFEINE! Who doesn’t love a coffee, tea, energy drink, energy shot, or pop to get through your day? Many people swear they can’t live without caffeine! 🙏🏻

Did you know that caffeine:
☕️Dehydrates the body
☕️Limits our body’s ability to absorption vitamins & minerals
☕️Increases our calorie intake… because let’s be real the latte with all the fixings is the best
☕️Creates a false fight or flight response
☕️Acidifies the body
☕️Creates nervousness

BBQ CHICKEN SALADS! Because of the amazing weather today, I wanted to eat something cold! Salads are always a go-to for me because they are quick, easy, & pack a bunch of nutrients! 👊🏻

Ingredients:
2 cups spring lettuce mix (other greens of your choice)
1/2 cup of rotisserie chicken (hot or cold)
1/2 cup sliced orange or red pepper
2-3 Tbsp BBQ sauce for chicken
1/4 cup diced cucumber
1/4 cup died tomato
Handful of cilantro
Handful of shredded carrots
Handful of sea salt grain free tortilla chips
2 Tbsp of plant based ranch

Recipe:
1. Put spring greens in a bowl.
2. Add cucumber, pepper, tomatoes, & carrots.
3. Mix BBQ sauce with chicken in another bowl until chicken is coated evenly. Then add onto of vegetables.
4. Top with cilantro & tortilla chips.
5. Drizzle with plant based ranch dressing.
6. Enjoy!

Basil Thai Ground Turkey🫑🧄This dish hits on every flavor-sweet, salty, spicy, & savory! Try it over your favorite rice!

Recipe:
1 pound ground turkey
2 green peppers, sliced in strips
2 medium yellow onions, sliced in strips
1/2 oz of basil
1 chunk of ginger
1/2 cup coconut aminos
1 tsp olive oil
1 tsp garlic powder
1/2 tsp red pepper flakes
Salt & pepper to taste

Directions:
1. Heat olive oil in a large nonstick pan over medium heat.
2. Add ground turkey & cook until brown.
3. Add peppers & onions. Sauté until tender. Add Basil.
4. Grate ginger over turkey, peppers, & onions.
5. Add coconut aminos & stir to combine all ingredients.
6. Add spices & taste to ensure yummy-ness!

BEETS HELP OUR HEART SYSTEM NEVER SKIP A BEAT! For love month, I wanted to share a juice that supports our heart! 💘

Beets help the heart system:
💗Cleanse the blood
💗Improve blood circulation
💗Balance blood pressure
💗Protect blood vessels

Recipe:
💗1-2 large red beets, peeled
💗3-4 medium apples (I love pink ladies)
💗3-4 large carrots
💗1 cucumber
💗1 lemon juiced
💗1 thumb nail of ginger (more if you like ginger)
Makes about 24-32 ounces of juice!
