Mediterranean Chicken Stir Fry ππ₯
This vibrant Mediterranean chicken stir fry is fresh, colorful, and packed with bold flavors. Tender chicken, crisp vegetables, briny olives, and a squeeze of lemon come together in one quick and healthy skillet mealβperfect for busy weeknights!
π₯ Ingredients
1.5 lbs chicken breast, cut into 1-inch pieces
2 tbsp extra virgin olive oil
1 large zucchini, sliced into half-moons
2 bell peppers (red & yellow), sliced
1 cup broccoli florets
Β½ cup cherry tomatoes, halved
Β½ cup Kalamata olives, halved
3 cloves garlic, minced
1 tsp dried oregano
Β½ tsp smoked paprika
1 lemon (zest + juice)
ΒΌ cup feta cheese (optional)
2 tbsp fresh parsley, chopped
π©βπ³ Instructions
1. Season the chicken with oregano, smoked paprika, salt, pepper, and lemon zest.
2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken and cook 5β7 minutes until golden and cooked through. Remove and set aside.
3. In the same pan, add remaining olive oil. SautΓ© garlic for 30 seconds until fragrant.
4. Add zucchini, bell peppers, and broccoli. Stir fry for 4β5 minutes until tender-crisp.
5. Return chicken to the pan. Add cherry tomatoes and olives. Squeeze fresh lemon juice over everything and toss well. Cook 1β2 more minutes.
6. Garnish with feta cheese and fresh parsley before serving.
Serve warm on its own, over rice, or with warm pita bread. Fresh, zesty, and absolutely satisfying! πΏ
