Ingredients:
For the Steak Marinade:
1 lb flank steak, thinly sliced against the grain
2 tablespoons soy sauce
1 tablespoon cornstarch
1 tablespoon vegetable oil
For the Stir-Fry:
2 tablespoons vegetable oil
1 large onion, thinly sliced
1 bell pepper, thinly sliced (any color)
1 green bell pepper, thinly sliced
3 cloves garlic, minced
1 tablespoon ginger, minced
1/2 cup beef broth
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon hoisin sauce
1 tablespoon rice vinegar
1 teaspoon sugar
1 tablespoon cornstarch mixed with 2 tablespoons water (cornstarch slurry)
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional, for extra heat)
Cooked white rice or steamed rice, for serving
Instructions:
Marinate the Steak:

1 cup shredded mozzarella

Β½ cup shredded cheddar

3 tbsp butter (melted)

2 cloves garlic (minced)

1 tbsp chopped parsley

Instructions

Preheat oven to 350Β°F (175Β°C).

Slice bread in a crosshatch pattern (don’t cut all the way through).

Mix butter and garlic, then drizzle into the cuts.

Stuff cheese into the cuts and sprinkle parsley.

Wrap in foil and bake 15–20 minutes until cheese melts.

Zucchini
4 medium zucchini, halved lengthwise and hollowed
Olive oil, for brushing
Salt & black pepper, to taste
Filling
1 lb ground chicken (or 2 cups cooked, shredded chicken)
Β½ cup red bell pepper, diced
Β½ cup onion, chopped
2 cloves garlic, minced
Β½ cup Kalamata olives, quartered
1 tsp dried oregano
Β½ cup cherry tomatoes, halved (optional)
Β½ cup feta cheese, crumbled
Fresh parsley or dill, chopped (for garnish)
Instructions
Prep the zucchini
Preheat oven to 375Β°F (190Β°C).
Scoop out the centers of the zucchini, leaving about a ΒΌ-inch shell.
Brush zucchini lightly with olive oil and season with salt and pepper.
Place cut-side up in a baking dish.
Cook the filling
Heat 1 tbsp olive oil in a large skillet over medium heat.
Add onion and bell pepper; sautΓ© 3–4 minutes until softened.
Add garlic and cook 30 seconds until fragrant.
Add chicken
Add ground chicken, breaking it up as it cooks.
Season with salt, pepper, and oregano.
