๐ฅ Healthy Meal Idea: Grilled Salmon with Quinoa & Roasted Veggies

๐ด Ingredients:
1 salmon fillet (4โ6 oz)
ยฝ cup cooked quinoa
1 cup mixed veggies (broccoli, bell peppers, zucchini, or carrots)
1 tbsp olive oil
1 tsp lemon juice
1 clove garlic, minced
Salt & pepper to taste
Optional: sprinkle of chia or flax seeds for extra omega-3s
๐ฅ Directions:
1๏ธโฃ Preheat oven to 400ยฐF (200ยฐC).
2๏ธโฃ Toss veggies with olive oil, garlic, salt, and pepper. Roast for 15โ20 minutes.
3๏ธโฃ While veggies cook, season salmon with lemon juice, salt, and pepper. Grill or bake for 10โ12 minutes (until flaky).
4๏ธโฃ Serve salmon over quinoa and top with roasted veggies.
